When I bake my sugar cookies they usually turn out round, like how I put them in. Should I be pressing them down before I put them in the oven?

OK, I'm about to sound like a geek...

if your cookie recipe call for BOTH baking soda and baking powder, then it shouldn't be necessary to flatten your cookies before you bake them...they'll flatten as they cook. When things get hot, the baking soda reacts with the baking powder, and "leavens" the cookies. In other words, it causes little air bubbles (actually CO2) inside the cookies, which expand and finally collapse.

If the recipe calls for baking powder ONLY, the cookies should be flattened (or cut out, or "spritzed", or whatever) before they're baked, because they'll retain their basic original shape as they cook. The baking powder alone does cause some bubbles in the cookies, but not enough to make the cookies puff...just enough so they won't come out like bricks.

With sugar cookies I generally roll the dough out about 1/4 inch and cut them out with cookie cutters. When I make chocolate chip cookies or "drop" cookies with a spoon then I slightly press on them.

It depends on the recipe, but drop cookies...no. They generally have enough butter in them that as they heat they will spread out evenly. I like to use a really small ice cream type scoop, drop them straight on to the cookie sheet and put them straight into the oven. It makes very uniform cookies

I've never seen a sugar cookie that is in ball form. Sugar cookies are generally a rolled cookie that you cut with cutters. What type of recipe are you using? To answer your question, yes, I would flatten them slightly.

I never do--especially drop sugar cookies. The only recipe I use that requires pressing is peanut butter cookies (cross hatch marks made with a fork).

Yes, but just barely. You should only put about 1-2 tablespoons of dough for each cookie. If you put to much then they wont cook in the middle.

what kind of cookies are they?

Most of the time it is not necessary to press them down. They will spread out on their own depending I believe on how much butter they have in them

Often sugar cookes are used to make cut outs, so you can flatten them.
