Creamy Fettuccini Alfredo

1 – 8 oz. Package Philly Cream Cheese (I use the light version – 1/3 less fat), cubed
¾ cup (3 oz.) fresh grated Parmesan cheese (I like De Giorno, don’t use Kraft)
½ cup margarine (I use I Can’t Believe It’s Not Butter Light)
½ cup milk (I use 1% or 2% low fat)
8 oz. fettuccini, cooked, drained (I use the fresh Contadina low fat one)

In large saucepan, combine cream cheese, Parmesan cheese, margarine and milk.
Stir over low heat until smooth. Add to drained fettuccini and toss lightly. Sprinkle with fresh Parmesan cheese if desired. Makes 4 servings.

Serving Suggestions:
I serve this with chicken Parmesan, salad, and garlic bread.

Quick Chicken Parmesan

4 Boneless Chicken Breasts, pounded flat
1 jar Spaghetti Sauce (I use Prego mushroom and garlic)
3 oz. Mozzarella Cheese, grated
2 cups Italian Bread Crumbs
2 oz. Parmesan Cheese
1/2 tsp garlic salt
1 egg, plus 1 tbs water, slightly beaten

Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings.

Hamburger Stew

1 lb. Ground Hamburger
1 Large Can Cream Of Mushroom Soup
1-2 Packets of Country Gravy Mix
4 Potatoes washed and cubed (with or without skins, whichever you prefer)
4-6 Carrots, washed, peeled and sliced thinly
4-5 Celery stalks, washed, sliced thin chunks
Various Spices, Season-All, Chives, Pepper, Salt, or whatever spices you like.
Alternatly, you can use Mushrooms sliced or Zuchinni Squash or both.

While washing and chopping or cutting all your veggies into a large bowl, fry hamburger til browned and cooked completely.
With all the veggies, you can either boil them first for a while to soften or use a slow cooker to cook. Then you don't have to pre cook them.
In another bowl, mix the Cream Of Mushroom Soup with the packet(s) of Gravy Mix. Then add water, alittle at a time, then mix, until it's like pudding, maybe just a little runnier.
Add all ingredients together and mix with large spoon, add to large pot. Allow to simmer on low for 2- 4 hours or put all in a slow cooker and simmer all day. Either way, just add crackers or a salad or both and it's a meal.

4. Salt and pepper to taste.
5. Add macaroni and stir gently.
6. Sprinkle with crumb topping.

These I learned from my grandma, who had 10 kids...
Mix hamburger with chopped onion and egg and fry in patties. They are great with ketchup and no bun. (the egg and onions make the hamburger feed more people)
Mix canned salmon, crakers and egg and fry in patties. These are great with lemon juice or ketchup.
Fry some potatoes (in bacon grease is the best), add chopped onions and green peppers. While the potatoes are frying, whisk some eggs with milk, tear up pieces of bread and add to the egg mixture until the bread soaks up all the egg mixture. When the potatoes are just about done, add the eggs with bread and cover for a few minutes. Uncover, mix well and continue frying until egg mixture is cooked thru. (if you cooked some bacon first for the grease, crumble the bacon and add to warm up before serving)
All these recipes use egg to stretch the staple food to feed more people.
Thanks for the question, I will check back to see your other answers!

I tossed a bunch of stuff in a pan and made it awesome. I call it Chicken Pot-Pie Rice.

Get four boneless, skinless chicken tenderloins. Cut them up, and put them in a pan with a little vegetable oil in it on low heat. Sprinkle chicken seasoning liberally over chicken, add a pinch of garlic seasoning, a good dose of onion seasoning, and just a touch of ginger. Heat until chicken is no longer pink in the middle.

Toss in veggies of your choice (I like to use Asian Medley frozen veggies with the baby corn). Add a little more chicken seasoning. Drop in a can of cream of mushroom soup (do NOT add a full can of water to the condensed soup, just use half a can). Stir well. Add 1 tsp. chicken boullion. Cook until everything is hot.

Meanwhile, put on rice (1 cup rice, two and a half cups water, one teaspoon salt, heat to boil, boil until soft).

Top your rice with your chicken stuff.

1 lb ground beef
taco mix
dry ranch mix
1 can rotel
1 can del monte mexican style tomatos (blended)
2 cans pinto beans
1 can red kidney beans
2 cans corn
Optional- beef brof to make it thinner and last longer

This is so good and really filling because of the beans so it last for awhile.
