By all means, but don't get your oil to hot or you may burn your coating, by the time it's golden your fish is done:

FISH FRY COATING MIX

Ingredients:
1 1/2 c. yellow cornmeal
1/4 c. all-purpose flour
1 tbsp. lemon pepper
2 tsp. salt
1 tsp. onion powder
1/2 tsp. paprika

In a large bowl combine all ingredients. Store in an airtight container. Makes about 1 3/4 cups mix.
To prepare fried fish: Dip fish in buttermilk and roll in coating mix. To cook, fry fish in hot oil (peanut oil best) until golden brown.

How To Fry Fish

Here's How:
Rinse filets and pat dry with paper towel
Drop filets into sack with 5 parts cornmeal and 1 part flour
Shake well to coat filets
Drop filets into hot grease, a deep fryer is prefered
Cook for five minutes for each inch of thickness
Remove and drain on paper towels layered on newspaper
Serve with french fries, hush puppies and cole slaw
Tips:
Don't over cook fish!
Check by breaking open filet - if it flakes easily, it is done



Corn Meal Coating for Fish


1/2 cup Quaker or Aunt Jemima Enriched White or Yellow Corn Meal
1/2 cup all-purpose flour
1-1/2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
1 egg
2 tablespoons water
1 pound boneless fish fillets
3 to 4 tablespoons vegetable oil




Combine corn meal, flour, chili powder, salt, garlic powder and pepper.
Beat egg and water until well combined.
Dip fish fillets in dry ingredients, egg mixture, then in dry ingredients again.
Heat oil in large skillet over medium heat. Fry coated fish 2 to 3 minutes per side or until fish flakes easily with a fork.

Use Zatarain's Crispy Southern fish fry. It uses cornmeal but gives the fish a really nice spice to it. Makes your dinner prep super easy no added mixing needed.

Go buy House of Autry Or Moss Seafood Breader. You will never need another. make sure you pat fish dry , salt and then roll and get heat to med high. fish cooks fast. If they do not have this, Add 2 parts of cornmeal to 1 part flour,

Absolutely, in fact for frying catfish and often trout, it is the preferred method over flour. First flour the fish if you have flour, then dip in egg, then cornmeal. This will prevent the coating from falling off during cooking.
