My husband has to eat cold lunches at work and is getting sick of sandwiches and won't eat vegtables I need some ideas please

cold pasta and rice is nice if you mix it with tuna peas and onions. also frittata or sausage rolls.

I make my Dad lunches and I make him Peanut butter and butter sandwiches. I also throw some oatmeal squares and a granola bar with his lunch. If your husband wants something different try mashed patatos with gravey or even left overs from the night before. All he has to do is heat it up in a microwave oven. I bring my own lunch to school, but I get sick of sandwiches and decide to buy a burger or something. I just usually bring left overs and heat them up. Hoped I helped.

Tuna fish salad and crackers. It's a shame he won't eat salads because you can by the spicy chicken or Cajun chicken and make a salad. Make a meatloaf and slice it up, it's good cold. Cold pasta salads are good. You can also change up the sandwiches by making egg, tuna, ham salads instead of always send lunch meat.

I take it by saying he has to eat cold lunches he doesn't have access to a microwave or something....
He won't eat veggies huh? Hmmm well, how about this:
- salad with pieces of chicken (dieced)
- pita
- wraps
** Wrap/Pita fillings: **
: egg salad, chicken salad, lunch meats with salad, stir fry mix {beef/chicken, bean sprouts, shredded carrots... cooked then stuffed after cooling}, chicken with lettuce and let him bring his fave sauce to put on so it doesn't get soggy, taco mix (make like a cold taco/burrito), BLT, tuna with lettuce or just on it's own and same with salmon....

If you have a thermos you could try that... get cans of ravioli or something like that once in a while... or homemade soup just heat it up on the stove till it's boiling or something before putting it into the thermos.

Hope some of these help. I know you get sick of sandwiches after a while...I've been there before.

couscous mixed with vegetables like carrots, zucchini, broccoli florets, onion, peppers, cilantro and a little olive oil and red wine vinegar served with a couple of pieces of cheese rolled up like monterrey jack or swiss and a couple of pieces of cold cut rolled up like prosciutto or peppermill turkey

SUPER FAST, SUPER EASY, economical, tastes fine cold, can be made the night before and grabbed from the fridge in the morning and thrown in to briefcase (the hardest part is chopping the vegetables)

it's like eating rice so you barely notice the vegetables. if he is really finicky then how about soup. Soup or gumbos can be made ahead of time, packed into separate tupperwares, heated up at work or some taste fine at room temperature and served with a chunk of bread.

Thats a tough one. I also work outside and got sick of sandwiches.
Now I take
cracker and cheese and summer sausage
nuts
apples
chocolate
thermous of tea or soup
pita and humous

I find the variety much more satisfying than a boring old sandwich

shrimp are good cold, so is turkey or ham in chunks. What about chicken or tuna salad with crackers. Hummus with pita if he'll eat it. Hard boiled eggs maybe. Or get a really good thermos and put chili or stew in it. Most of them will keep food hot at least until lunch-time. I even have been know to put mashe potatoes in mine.

I used to make my dad's lunch. I would always take whatever meat we had left over from dinner and put it over pasta or a salad (if it was chicken). Also you could make your own trail mix and I always included a few pieces of fruit. Lastly you could add a snack bar or a few crackers with peanut butter on them. Celery and peanut butter was also popular.

Thats rough maybe lunchables? My husband has access to a micromave so I often let him have last night's leftovers. Maybe like cold pasta salads with chicken.
