The Hotel Left Bank Saint Germain at 9, rue de l'Ancienne Comédie in the 6th arr. is just what you are looking for.
A description with pictures can be found here: http://www.france-hotel-guide.com/h75006left_bank.htm
This is an excellant location and within easy walking distance of both Notre Dame and the Louvre.
If you stay there then I suggest dinner next door at Le Procope, the oldest restaurant in Paris. Here is their website: http://www.blanc.net/procope/en/index.htm

Hi Sarah - a splendid notion !
I love Paris, and lived there for a while.
While settling in, I discovered the Hotel Brettonerie, in Rue de Brettonnerie, 4th arrondisement, just off Boulevard St. Sebastipol with features such as :
A balcony on a cobbled street, looking across to "Le Petite Gavroche" bar, restaurant & upstairs live music.
A five minute toddle to Hotel de Ville, Place de Concorde, The Louvre, The Seine, and the Pompidou Centre is just around the corner.
A short hire car / taxi to Tour Eiffel, Notre Dame, Montparnesse, the fle market, and dear knows what else for a few bucks.
Centre de la Ville, middle of town, for about £200 per week, last I was there. Pays to book the room early, though, as I find they can get a bit pushed come the "Grand Vacance".
Not suprising.
Lovely bedrooms done out in romantic Parisian style, Excellent staff, and champagne for breakfast on the first night !
Stay clear of the Novotel, Hilton & all the big names.
They are mostly cr*p, with no care for customers.
So generally, the family run side-street jobs are by far the best.
Clean, friendly, helpful etc.
Check the hotel listings in the Parisian tour guide, of course, but the above mentioned is worth an enquiry.
Bon chance, mon ami, et aussi l'amour.
Bob,
Who's boat only just made it there one week, to be locked up for mooring it in the wrong place.
Hey Ho - all was well.

Hi,
The Grand Hotel Intercontinental has room that is awesome: the bed has a heart shape and the room is pretty and confortable. The hotel is high standing and the staff is very nice and polite.
It is the most romantic ever...
The hotel is located in the heart of Paris, next to the majestuous Opera Garnier...

Sounds like you want to stay in something with real French Latin Quarter / Norte Dame authenticity !!
Have a look at the hotels in this directory - the pictures tell a thousand words - the bigger hotels hold the best service - and it sounds like you want to have a "pampering" "romantic" visit to remember.
Have a look at Venere or Cheaperthanhotels

Le Relais Saint-Jacques a wonderful little 4 star hotel in the Latin Quarter. Very close to the metro but also within walking distance of a lot of sights. Staff speaks English very well and extremely helpful. Joseph at the front desk was the best. There is a small restaurant next door that was wonderful.

That will be difficult because from the airport to any hotel, the traffic is so horrible, it's really hard to get into that romantic mood. The first day isn't going to be good.
But, once you are in Paris, the romance will pick you up and you could almost be anywhere and your heart will be in good spirits.

Hi Sarah,
good choice, Paris is an amazing, romantic city!
I'm living over here for 1 year and I can suggest to you to find a nice, little, very characteristic hotel in the 6th arrondissment (Saint Germain, close to LAtin district, in city center), Otherwise something in the 18th arrondissment close to Sacre Coeur in Montmartre, very romantic corner.
You can choose the hotels in a web site as www.booking.com and then enjoy your staying walking around the romantic street of full of lights of this incredibly city: check this link for some suggestion about "Romantic Promenade" http://www.pizzaconnectionweb.com/Sun+Goes+Down+Paris+Wakes+Up.aspx
Enjoy your stay here!!!!!!!
