I just bought a frozen pack of smelt from the grocery store and the label says not cleaned. How do I clean them and what is the best way to cook them? fry or bake?

If they are not cleaned, do they still have a head? I will start from the beginning.

Get out your kitchen sheers, or a good pair of scissors. Cut the head off. cut from the head hole to the anus, on the belly of the fish. take your thumb and push out all the insides, making sure all you see is bones in the middle, rinse well. If you want to remove the bones gently pull the bone from the flesh. (the bone is usually black)

I like my smelt fried, battered with drakes mix.

I used to go to the swinging bridge as a kid and catch 1000's of smelt, dad and I had a production line in the side yard where we cleaned the smelt, mom then took it into the house and prepared it for cooking or freezing.

Some people don't clean them. I put them in a bowl of cold water. They thaw fast. I take their fins off and their spine out. I bread them with flour and fry them on medium high heat. About 3 minutes on each side until golden brown. Do not over cook.

Thaw 'em out, cut off the heads and tails, slice down the middle if the belly side and remove the insides.

I fry it. Dip them in egg and roll in cornmeal.
My dad and I lived on a boat and used to net them at night.
Yum! The place gets kind of stinky though.
