anyone have a good, easy recipe for orange roughy? usually i just broil it with some butter, garlic salt & bread crumbs, but thought i'd look for a variation.

Serve on paper with french fries like they do in the "Chippers" in Europe. Have tartar sauce and a side of malt vinegar available.

2. Orange Roughy Meditteranean
Sautee the fish in black and green olived, sundried tomatoes, fresh basil, some artichicke hearts, a splash of wine, tablespoon of tomato paste and butter, Serve with basmati rice.

It is as good for your health as any other fish. Orange roughy is a deep water fish. It is pretty much what its name indicates: it is orange, and not all the attractive, but it is delicious when prepared properly. I find most surprising that it has an extraordinary life span: over 100 years! I don't know whether this has anything to do with it, but it is also very susceptible to overfishing.

Soak it in lemon juice for at least 15 - 20 minutes, and after draining off the lemon juice - poach it in a sauce of 1/2 cup white wine (Pino Grigio is great for this, or any Sherry), slow sminner the wine for about 10 minutes to "burn off the alcohol in the wine or this will curdle the 3/4s cup of Half & Half cream you will then be adding to it. Then add 1 tablespoon small capers, Pinch of salt, garlic powder, and pepper (ground green pepper if possible) to taste and - 1/2 teaspoon of white flour to thicken the sauce if desired. .

Bake it with butter, grallic,lemon, and seasonal. Then make a crab sause to put on top. You can just buy canned crab meat and look up a recipie or put it in some bernise sause which you can buy in packets. It is sooo good.
