I cook chicken with orange juice all the time and then reduce it for a sauce , i,ve never had any problems with it. the only down i could forsee with cooking it in a crock pot is condensation from the lid would thin your sauce and then add more time to cooking on the stove for reduction but thats no biggie.

Crock pots cook at low heat you shouldn't have a problem, but I don't own a slow cooker. I have used orange juice on a chicken dish before and it came out great.

Sounds great to me. Here is a recipe I found!
Orange Curried Chicken
1 onion, chopped
1 yellow bell pepper, cut into 1" pieces
1 green bell pepper, cut into 1" pieces
4 boneless, skinless chicken breasts, cut into 1" pieces
1 clove garlic, minced
1 cup orange juice
1/4 cup water
1/2 tsp. salt
1 Tbsp. curry powder
3/4 cup whipping cream
3 Tbsp. cornstarch
Hot cooked rice
Chutney
More curry powder
Cashew pieces
PREPARATION:
In 3-4 quart crockpot, combine onion, peppers, chicken, garlic, orange juice, water, salt, and curry powder and mix well. Cover and cook on low for 6-7 hours until chicken is thoroughly cooked.
In small bowl, combine whipping cream and cornstarch and blend with wire whisk. Stir into crockpot, turn heat to high, and cook for 15-20 minutes, stirring once, until sauce thickens. Serve over hot cooked rice with chutney, more curry powder, and condiments. Serves 4-6

It should be o.k. It would probably reduce into a syrup though. You may want to add a little water just to keep it from getting too thick, unless you like sweet glazes. I have used water and wishbone Italian dressing (the one with all the herbs and stuff that you have to shake up) and that is really good too.
