Microwave Corn Pudding 2 cups milk 1/4 cup (4 ounces) melted butter or margarine 1/2 cup yellow cornmeal 1 tablespoon sugar 1/2 teaspoon salt 4 large eggs, beaten several dashes Tabasco or other hot sauce, or to taste 1 can (11 to 15 ounces) Mexican-style corn, drained 1 1/4 cups French fried onions, divided 4 ounces shredded Cheddar cheese (1 cup) 1/2 teaspoon baking powder PREPARATION: Combine milk, melted butter, cornmeal, sugar, and salt in a 3-quart microwave-safe bowl. Whisk well; cover with plastic wrap, make a small vent, and microwave on high for 8 minutes, or until mixture is thick and most of the liquid is absorbed. Whisk twice during cooking. Combine eggs, Tabasco, 3/4 cup fried onions, cheese, and baking powder in a bowl. Stir egg and cheese mixture into the cornmeal mixture. Microwave uncovered at 50% power (medium) for 5 minutes, or until knife inserted in center comes out clean. Sprinkle with remaining fried onions (1/2 cup). Microwave for another 1 minute at 50% power. Serves 4 to 6 as a side dish

Tamale Pie Recipe
!
Ingredients in this tamale pie recipe include lean ground beef, diced tomatoes, corn, and cornmeal, along with ripe olives and seasonings.
INGREDIENTS:
1/2 cup chopped onion
1 pound lean ground beef, round or chuck
2 tablespoons butter
1 can (15 ounces) diced tomatoes, undrained
1 can (12 ounces) kernel corn or Mexican style corn
1 1/2 teaspoons salt
1/4 teaspoon pepper
2 teaspoons chili powder
3 cups boiling water
1 cup yellow cornmeal
1 teaspoon salt
1 egg, lightly beaten
1/2 cup chopped ripe olives
PREPARATION:
Sauté chopped onion and ground beef in butter until beef is browned; add tomatoes, corn, 1 1/2 teaspoons salt, pepper, and the chili powder. Set aside.
In a saucepan, boil water; slowly stir in cornmeal and 1 teaspoon salt. Cook over low heat, stirring constantly, until very thick, about 5 minutes. Remove from heat and stir in the beaten egg; add chopped ripe olives. Spread half of the cornmeal mixture into the bottom of a 2-quart casserole; top with beef filling. Drop spoonfuls of the remaining cornmeal mixture on top of filling. Bake at 400° for 20 to 25 minutes, or until nicely browned.
Tamale pie serves 6.
This only gets rid of a cup but it is good.

Fried polenta or tamale pie. We love both of those. Or you make a double cornbread by adding a can of drained corn to the cornbread batter.

i saw you had received a recipe for corn meal mush and decided you need to make fried mush for breakfast sometime.--------------
take your mush while hot and pour into a buttered loaf pan.hit the bottom on the cupboard a few times to pack tightly and force out bubbles. set in fridge overnight. in the morning slide it out of the pan, slice into 1 in. slices. you can fry as is in oil on med heat or dredge in flour,dip in egg and milk mixture ,then back into the flour.(handle carefully ,it,s delicate) fry in oil like french toast remove when golden and serve with butter and syrup. yummy!

I like using it to crust things. You can put a crust on everything from salmon to sea bass and even pork loin.
If you want to try to make polenta, that's also good too. I'm sure there's tons of easy polenta recipes online.
