i am baking a cake this evening for my daughter's birthday party and i am curious about using room temperature eggs. my mom says it's best to bake with eggs at room temp. how long should it sit out to be room temp., and how long will it take to spoil? i don't want to bake with a rotten egg.

When I am making some specific cake recipes, I take the eggs out to let them reach room temp. Also, if I am in a hurry or forgot, I let them soak in slightly warm water until they are no longer "ice box" cold. Warmer eggs seem to blend in easier and faster for me.

Don't worry about there being something harmful with using room temp eggs...think abou this--they aren't refrigerated when there origiannly laid., now are they?!

Take it out a couple hours before you want to use it.

My mom told me the same thing about eggs. She swore things were better if they were room temperature.

Don't worry about them spoiling in a few hours. When I was a kid we kept them at room temperature on a back porch while we saved them until we had enough to sell. A day at room temperature will not hurt an egg.

Let me give you another tip. If you are concerned about the quality of an egg don't break it right into you mixing bowl. Break it into a small bowl & if it is O.K. then dump it in your mix.

Two or three hours up to overnight should work. It would take several days to weeks before it would spoil depending on how fresh it is at the time you leave it out.
Yes, you will have better results with room temperature eggs.

i'd take it out an hour ahead of time. even if it's not completely down to room temp, it will be fine...i usually use eggs right out of the fridge and have no problem! and an hour isn't long enough for it to get warm and spoil. better to be a little too cool than too warm.
