Milk contains fat,and fat keeps the flavors inside it and any kind of food. If, for a piece of meat, you could be able to remove all the fat, then it will be nearly with no taste at all.

I'm not 100 % sure what your asking but I believe that hopefully this is the answer. Metals such as Iron and Copper leach out into the milk and even can change th colour. That is why you should use Stainless steel.
