I need a new chicken recipe for this evening, nothing too complicted, I have to go shopping later today.

Hows this for simple:
Take a chicken breast 8oz or so, poach it in a simmering pan of light veg stock- or water, for 6/7 minutes.
Heat a frying pan, add olive oil and transfer the drained and dried chicken breast to the pan. Brown the chicken up, adding some butter towards the end of cooking and baste the chicken with it to achieve a really good colour.
Result, a perfectly cooked and moist piece of chicken. Season and serve with whatever you want. Goes well with a nice buttery mash.Perfect!

Roasted Balsamic-Glazed Chicken

This chicken gets very dark when roasting. If you're concerned about burning, tent with foil, however be sure to remove it for the last 15 minutes of cooking.


1/4 cup balsamic vinegar
1/4 cup extra-virgin olive oil
2 teaspoons salt
1 teaspoon freshly ground black pepper
3 tablespoons herbes de Provence
1 medium lemon, juiced and halves reserved
1 (5 to 6-pound) roasting chicken
4 sprigs rosemary
8 cloves garlic
1 thinly-sliced white onion
4 fennel bulbs

Preheat the oven to 350 degrees F.
Combine the vinegar, oil, salt, pepper, herbes de Provence, and lemon juice in a bowl, whisking until emulsified.

Pour over the chicken, taking care to completely coat it. Insert the reserved squeezed lemons, plus the rosemary and garlic into the cavity. Layer the onions in a roasting pan and place the chicken on top. Slice the fennel in half lengthwise and surround the chicken with it, cut side down.

Put the chicken in the oven and immediately reduce the temperature to 250 degrees F and roast for 1 1/2 to 2 hours, basting occasionally

Prep Time: 5 minutes
Cook Time: 2 hours
Yield: 4 to 6 servings

Jerk Chicken with Carribean RiceChicken marinated in a jerk sauce with rice, oranges, pineapple, peppers, coconut and macadamia nuts.Ingredients:
• Marinade:
• 2 Tbsp lime juice
• 2 Tbsp water
• 1 tsp pumpkin pie spice
• 1/2 tsp nutmeg
• 1/2 tsp salt
• 2 tsp brown sugar
• 1/2 tsp thyme
• 3/4 tsp black pepper
• 1/2 tsp cayenne pepper
• 1/2 tsp garlic chopped
• Other ingredients:
• 3 skinless boneless chicken breast halves, cut in strips (stir fry size)

• Rice ingredients:
• 2 cups hot cooked white rice
• 11 oz can Mandarin oranges, drained
• 8 oz can crushed pineapple, drained except 1 tbsp liquid
• 1/2 cup chopped red or green peppers
• 1/4 -1/2 cup coconut
• 1/4 -1/2 cup chopped macadamia nuts
• 1-2 Tbsp chopped onion
Method:
Mix together all marinade ingredients. Pour over cut up chicken and marinate for a few hours. Spice quantities may be altered to your taste preferences. Dump chicken & marinade into skillet, cook chicken through, then cover and simmer for 10 minutes. Cook rice while chicken is cooking. Stir together all rice ingredients. Dump chicken into rice mixture and mix well. Heat through and serve.

Beer Can Chicken

1 (3 1/2 lb) chickens
vegetable oil, to coat chicken before applying dry rub
FOR THE MARINADE
1 (12 ounce) can dark beer
1/3 cup Dijon mustard
1/3 cup soy sauce
2 tablespoons lemon juice
1 medium onion, chopped fine
4 cloves garlic, crushed
1 teaspoon Tabasco sauce
1 teaspoon coarse salt
1/2 teaspoon fresh ground black pepper
FOR THE DRY RUB
2 teaspoons paprika
2 teaspoons dry mustard
2 teaspoons coarse salt
1 teaspoon fresh ground black pepper
1/2 teaspoon ground cumin
1/2 teaspoon celery seeds
1/4 teaspoon ground nutmeg
FOR THE BARBECUE
2 cups wood chips, preferably chunks,soaked 1 hour in
water or beer, then drained

Make the marinade by combining all marinade ingredients: whisk well to mix.
Remove and discard any giblets and fat just inside the body and neck cavities.
Rinse the chicken inside and out under cold running water, then drain and blot dry inside and out with a paper towel.
Place chicken with the marinade inside a large resealable plastic freezer bag and marinate in the refrigerator at least 4 hours, preferably overnight, turning the bird several times to marinate evenly.
Make the rub by combining all rub ingredients; set aside.
Open the beer can and pour half the beer over the soaking wood chips.
Remove the chicken from the bag with the marinade.
DISCARD marinade.
Sprinkle 1 teaspoons of the dry rub inside the neck cavity of the bird.
Drizzle oil over the outside of the bird and rub or brush dry rub all over the skin.
Spoon the remaining dry rub into the half-filled can of beer (beer may foam, which is normal).
Using a church key can opener, make 2 additional holes in the top of the can.
Hold the bird upright, with the opening of the body cavity at the bottom, and lower it onto the beer can so the can fits into the body cavity.
Pull the legs forward to form a tripod, so the bird stands upright (the rear leg of the tripod is the beer can).
Tuck the tips of the wings behind the chicken’s back.
Light the gas barbecue and, using an oven thermometer inside the closed grill, heat to 350°F When warmed, turn off one of the burners and stand the chicken upright on the can over the NON-LIT burner.
Place oven thermometer beside the chicken, not above the direct heat.
Wrap the soaked wood chips loosely in foil, punching a few holes in the foil to allow smoke to escape, and place foil pouch directly over the LIT burner.
Reduce heat, if necessary, to maintain interior temperature at 350°F Close lid.
Cook until chicken skin is dark golden brown and the meat is cooked through, about 1 to 1 1/2 hours.
Use an instant reading meat thermometer inserted in the thickest part of the thigh, not touching bone; chicken is done when the meat thermometer is 180°F If chicken skin starts to brown too much, loosely tent the bird with aluminum foil.
When done, remove bird and let rest, standing on a platter at room temperature, about 5 minutes.
Lift chicken off the can, taking care not to spill hot beer.
To serve, cut chicken in half or quarters.

Did you know your crock-pot is a great cooker for chicken?
Season (2) Cornish hens as desired
Zest (1) orange
place 1/2 of the zest-ed orange in each cavity
Dice (1) large onion
Place all ingredients in crock pot
add 1 full cup of wine..(fruity)
Add a medium jar of orange marmalade
add water until birds are covered
Cook on low for 6 to 8 hours
Place birds on a bed of rice and pour the orange gravy over them and serve

BBQ chicken:

chicken thighs or drumsticks
bottle of bbq sauce
brown sugar (if you like)
salt & pepper

marinate the chicken in the bbq sauce (add s&p and/or brown sugar for taste)for at least 30 mins
bake on a broiling pan (or whatever you have) at 400 for about 35-40 mins until done
(Note: brown sugar will give a nice "burnt" or "grilled" crust)

Serve with corn on the cob, carrots, baked beans, salad, whatever you like... Cornbread also goes well with this meal...

Spicy Chicken Spaghetti

INGREDIENTS
1 (16 ounce) package uncooked spaghetti
1 cup Worcestershire sauce
1 cup ketchup
1 cup tomato sauce
1 cup chopped green bell pepper
1 cup chopped onion
1/2 cup brown sugar
1 teaspoon chili powder
1 whole cooked chicken, deboned and chopped

DIRECTIONS
Bring a large pot of lightly salted water to a boil. Place spaghetti in the pot, cook 8 to 10 minutes, until al dente, and drain.
In a separate pot, mix the Worcestershire sauce, ketchup, tomato sauce, green bell pepper, onion, brown sugar, and chili powder. Bring to a boil. Mix in the chicken, reduce heat to low, and simmer 10 minutes, or until chicken is heated through. Mix in the cooked spaghetti, and serve warm.

Try Campbell's soup web site. Lots of chicken recipes, and soup is the sauce. Easy, cheap, and quick.
They have been showing a commercial with cheesy rice and chicken. It looked good.
I bought chicken today at the grocery, and I am going to fry it, and make mashed potaoes and gravy. Old recipe, but good.
Someday I will try chicken pot pie, homemade.

how about baked chicken breasts.....buy a couple of whole chicken breasts...bone in and skin on....preheat oven to 375.....rub olive oil into the chicken then sprinkle liberally with salt, pepper and garlic powder....cook for 40 minutes or until juice runs clear....enjoy

bbq chicken in crockpot,,,,

1 bottle of your fav bbq sauce

1 pack of chicken of choice

make sure chicken is covered

cook 6-8 hours in crockpot

or do a sweet a sour version get a good sauce

add pineapple and carrots

cook like above,,,

fast and good
