French toast always looks elegant. Use thicker sliced bread, even cinnamon bread. Serve with warm syrup, have a dollop of whipped butter in a cute little bowl on the plate. Dust the toast with powdered sugar.
Another one is a toasted English muffin, with some ham, cheese, an egg, and some hollandaise or some cheese sauce over the top. A couple crossed spears of asparugus on it is really elegant.

Quiche is also a winner. It would take the 15 minutes to prepare, plus baking time.
Always garnish the plate. Makes even the plainest fare look like a pro did it.
Fruit compote is always a winner. Served in a clear glass dish. Bananas and strawberries, especially. Melons in season.

Try something a little different - easy to make and looks great.
Huevos Rancheros
4 6-inch corn tortillas or 7-inch flour tortillas
2 tablespoons cooking oil
8 eggs
1 tablespoon water
1 cup salsa, warmed
1/2 cup shredded cheddar cheese or Monterey Jack cheese
Cilantro or parsley sprigs
Wrap tortillas tightly in foil. Place in a 350 degree F oven about 10 minutes or until heated through.
Meanwhile, in a 12-inch skillet heat cooking oil over medium heat. Carefully break eggs into skillet. When whites are set, add water. Cover skillet and cook eggs for 4 to 5 minutes or until the yolks are just firm.
Place warm tortillas on dinner plates. Top each with 2 fried eggs. Spoon some of the warm salsa over each. Sprinkle with cheese. If desired, garnish with cilantro or parsley.
Although I like the fried eggs, you can substitute scrambled eggs. Serve with refried beans topped with cheese.

How about scrambled eggs on 'posh' toast (use bloomer bread or something other than 'normal' sliced bread) with grilled tomatoes - all seasoned well with a sprig of parsley or something to 'dress' the plate? Otherwise how about natural or greek yogurt with fresh and dried fruit or a nice muesli? Some orange juice, a pot of tea or freshly brewed coffee too...
