i am catering for an event and want to serve fried won tons, and i want to serve them hot. i obviously can't fry them all in the same batch so how can i serve them all at the same time hot and still crispy?
if i leave the cooked ones to keep warm in the oven will they stay as nice and crispy?

any other options?

they won't be sitting too long. they can all go out once i've cooked the last batch. so that's only probably about 10-15 minutes.

yes keep them warm in the oven
but do not cover them with baking foil
leave them uncovered
condensation from the heat they generate
will make them go soggy if they are wrapped
up in foil.

You dont state if you,re cooking and serving in the same place or packing it and taking somewhere.If you are cooking and serving at the event and want a crispy hot product then i suggest waiting to the last minute ,frying and put them out just before people start walking through the serving line (im assuming of course it,s buffett syle) they will hold well under a heat lamp for at least ten min.and then start to loose their crispness. if you have to take said food somewhere there is no hope for cispiness,sorry.in that case i would go with steamed wontons in a black bean sauce or teriaki. they hold up better for travel.

Can you fry them, put them out on blotting paper, then fry them a few seconds again to crisp them just before serving? You could have more of them hot at the same time.

yes, you can leave them in a warm oven til needed, oven should be about 100 deg c, or gas 2..make sure you have the oven heated up, don't put them in a cold oven and then turn it on. I know I'm being very obvious, but some people ....

make them ahead of time, then warm them with heat lamp or microwave (they won't taste that good but what else can you do
