P.S - If anyone has recpies with hard boil eggs in the egg curry. ?

Well the asian guy at our corner shop gave me this recipe a couple of weeks ago;
chopped onion,eggs,curry powder,salt,green,chillies,coriander & water.
Fry up the onion til it's lightly browned,stir in the eggs that have been beaten first, slowly stir it for a minute,add 1 tablespoon of salt,2 of curry powder and mix in 1/2 cup of water,keep stirring it til it's nearly cooked then add chopped green chillies and a pinch of coriander,continue cooking til it resembles scrambled egg in texture.Then serve in pitta bread.

this may not be mum's but it's good and I developed it at an English Tea Room I managed for a couple of years. I'll try to scale it down for you, to feed friends and family rather than 150 affluent old ladies : )

1 doz. eggs, hard boiled and mashed
1 cup curry mayo (1 cup mayo, 1 Tb curry powder)
1 pint grape tomatoes, halved lengthwise
3 Tb cilantro, chopped fine
salt and pepper

If you initially feel that you don't have enough curry in the recipe, just let it sit in the fridge for an hour or so and then taste it again as you can always add more seasoning. The yellow madras color will develop also over a short period of time.

I also add green onions if I have them, or some sour cream if the mixture is too runny.

Serve it on croissant, tortilla wrap, or wheat bread with lettuce and onion if you like.

My neighbor makes an egg salad with curry that is really nice. She serves it on fresh spinach leaves.

8 hard-cooked eggs, chopped
1/2 cup mayonnaise
1/4 cup finely chopped pitted ripe olives
2 tablespoons finely chopped green onion
1/2 to 1 teaspoon curry powder
1/4 teaspoon salt

In a bowl stir together eggs, mayonnaise, olives, green onion, curry powder, and salt. Cover and chill for 4 to 24 hours.

Shell six hard boiled eggs,make four longitudinal,superficial cuts only the white should be slit.Heat about 2 tablespoons of oil in a pan,not too hot,place the eggs in the hot oil,fry till they change colour,lift out.Reheat the oil with a tablespoon of curry paste,this hould do for the occasional curry,we in India go through the laborious procedure of making our own paste with any number of ingerdients.Whenthe paste is well fried,add a large cup of tomato puree,allow to cook till thick & oil surfaces,add salt & the fried eggs,a sprig of curry leaves & a cup of warm water,simmer till thick enough for your use,thick if serving with bread thinner if it is to go with rice.

Boiled egg curry

8 hard boiled eggs(7-10 minutes in boiling water)
6/8 curry leaves
1 tsp ginger paste
1 tsp garlic paste
2 large onion finely chopped
2 large tomatoes finely chopped
1 tsp turmeric powder
1 tsp coriander seed powder
1/2 tsp cumin seed powder
1 tsp chili powder
1 tsp garam masala (Mix spice) powder
salt to taste
1/2 cup fresh coriander leaves finely chopped
2 green chilies (garnish only)
2 tbsp veg. oil
2 cups water

Heat oil in a wok or large frying pan
add curry leaves (They'll crackle)
add Ginger/garlic paste, stir fir 30 seconds
add chopped onions and stir fry till they change colour to pink
add chopped tomatoes and half coriander leaves. Fry till tomatoes soften.
Add turmeric/coriander/cumin/chili powder and keep stirring for two minute
finely mash two eggs and add to the pan and stir.
Add 2 cups water. adjust the salt to taste
Bring whole thing to boil.
Add garam masala powder.
Add 6 eggs cut in two
garnish with remaining coriander leaves and green chilies.
Serve with rice or chapati/tawa paratha

Ok, im sorry if this is a little bit wrong and tastes.. well.. rather horrible but it should be really NICE if i can remember correctly :
2 eggs
curry
just mix together and cook for 60 minutes in a hot oven and voilar!!
