Bittersweet. It creates a stronger contrast with the flavor of the mint. The combination is the best and that is why it has been adopted by the biggest chocoloate makers in the world (Switzerland and Belgium). The original After Eight is made that way. The other choices are just, let's say, pale copies !!

You can use either. Although normally my favorite chocolate for candies is the milk chocolate, with mint, I prefer the sharper taste of the bittersweet. For a truly different look and taste, try white chocolate sometime - it is wonderful.
