Here's an easy one that tastes great and you can just throw together.

-Left over cooked chicken
-can of mushroom soup
-veggies (use frozen of your choice, broccoli is great, mixed veggies, stir fry frozen veggie mix, etc.)
-Pack of stuffing mix

Oven - 325F

Cut the chicken into bite-sized bits. Mix together with the soup and veggies. Place in a greased casserole dish. Make the stuffing mix according to packet directions and spoon on top as a crust making sure to cover everything evenly. Bake for about 45 minutes. Sometimes I double the amounts.

Mexican Casserole

2 lbs burger
1 jar 16 oz your favorite salsa
1 can cream of chicken
1 can cream of mushroom
1 package of mozzarella
1 package of cheddar (your favorite)
1-2 bags Doritos nacho cheese

Brown the burger, degrease, put in a pan add the salsa and the 2 cans of soup, mix well over medium/low heat, take a casserole pan and the doritos at least 1/2 of a bag, put them in pan and crush them. pour the mixture in the pan over the doritos. take your cheese and put on top, cover with aluminum foil and bake at 350 for about 30 minutes. take out let cool a little bit and use the rest of the doritos to go with the casserole.

My mother makes a fantastic and very easy hamburger casserole. All you need is a pound of hamburger, a bag of egg noddles, 2 cans of cream style corn, and one can of chicken and rice or chicken and stars soup.
Brown the hamburger.
Cook about half the bag of egg noodles.
In an 8 X 8 glass pan, start to layer. Start with half the egg noddles, then half the hamburger, one can of cream style corn, the rest of the noodles, the rest of the hamburger, another can of cream corn, and one can of soup. Cover with foil and bake in a preheated 350 degree oven until hot and bubbly, about 25 minutes. Yummy!
