The reason why you remember certain dreams is because your starting to become awake, so if you are sleeping lightly you would probably remember more of your dreams than when you're sleeping like a rock. You also get liquid dreaming, where your consciousness never completely shuts down, where it feels like your not sleeping but you are actually, everybody has does nights ones in a while, just look at the time, you'll soon see that you've slept for an hour but it felt like five minutes. They say if you can master the art of liquid dreaming you should be able to control your dreams as if you where awake.

If your sleep is consistent night to night, than you have about the same amount of dreams every night. However, some mornings, you just might "remember" more of the dreams do to how close to the REM cycle you were upon awakening.

I've been told that the more you have on your mind, the more you dream, and that it is a lot of the time the things that are in the very back of your mind, whether it be a concern, worry or thought, that gets twisted into something you dream.

I take antidepressants, and I have noticed that I dream more since I have started taking them. I think they influence your sleep patterns, and you have more REM phases.
