It's because they stink! You must have noticed that dogs even like to roll in stinky substances? Tripe is the lining of a cows' stomach, which is probably why it smells so bad. The white stuff you can buy for human consumption has been washed to improve it's appearance, but dogs aren't fussy so they get it as it is.

Tripe is the fatty layer around the stomach of any animal, usually cow. I guess the skicks are dried out so they are nice and chewy.
In my experience a dog will eat almost anything, and if it smells good to them (i.e. meaty, fatty, rotten, shitty) they will cherish it like a prize and not let anyone else near it... don't worry that's normal... gotta love 'em!

dogs lick their own butts as well as any creature that goes near them, and seeing that tripe sticks is fatty tissue of an animal it probably smells better- plus i reckon the know we hate the smell so they know its theirs and we aint gonna take it off them

Tripe is intestine (meat).

Generally, dogs are wired differently than humans
and meat in all of its incarnations is far more attractive
to them.

I'm sure they would wonder why you like lettuce.
