here is a good pilo dough recipe it has worked for me .
20#---flour
1 1/4 # shortening
8 oz.---- cream tarter
5# ---eggs
10#---- water
mix to a med soft dough .turn out onto a lightly floured surface let rest 30 min.roll in 20 #puff pastry shortening
using the 3 fold method
roll 1 time (roll 3 more times using the 4 fold method )
let rest 30 min between each roll in the Frig. sorry you will have to do the math to get down to the size that you need.jim b

You could bake Baklavas for example
What you need:
1 package Philo dough
2 cups chopped walnuts
1-2 cups sugar
2 tablespoons cinnamon
1 tablespoon nutmeg
½ tablespoon ground cloves
½ cup melted butter
To Prepare:
Be sure Philo dough is at room temperature. Lay about 3-4 sheets of dough on greased cookie sheet. Sprinkle and spread melted butter over. Put another layer of dough and butter, but this time add the mixture of nuts, sugar, and spices. Sprinkle it over the butter.
Repeat these last two steps, alternating with just butter, and butter/spices combo, until Philo dough is gone. The last layer should be just butter sprinkled over the top.
Use a sharp knife to cut first vertically then diagonally to created diamond-shaped pastries. **This must be done before baking baklava.**
Bake at 325° until dough is crisp and golden brown. Remove from heat and let cool.
*While baklava is baking, make the honey sauce that pours over baked pastry. Bring to a boil 1/3-cup honey, 1 whole lemon halved, 2-3 cinnamon sticks, 1 tablespoon whole cloves, and about ¼ cup water. Once boiling, remove from heat and cover. When baklava and sauce are both completely cooled, pour sauce generously over pastry. Set for about 15 minutes.

you,re question is confusing. I would,nt attempt to make phylo dough myself it,s readily available in all stores.but if what you want is how to use it then i use it alot the limitation is your imagination and or food preferences. I love baklava MMM food of the Gods!But i see you already have a recipe for that.so i ,ll tell you about my favorite appetizer instead. I take chopped frozen spinach(1LB) thaw ,squeeze out the liquid put in bowl with 1 small onion chopped fine(i steam the onion in a coverd bowl with 1 tbs.water for 4 min.) chopped crisp bacon and one package of cream cheese.season to your taste .(I use garlic,salt,and cayenne pepper very little)
now lay out your sheet of phylo and brush with melted butter ,fold in from the side 1/3 brush with butter, fold the other side over to make 3layers brush with butter, now put a spoon of your mixture on one end kinda in the middle fold over the corner then up,then corner and up till you have a triangle(sorry wish i could show you.) anyway finish all the mix this way and put them on a tray .cook at 350 degrees untill golden brown and crispy.
