Hi I found this recipe for Bread pudding. Hope it helps
Bread Pudding
Ingredients
200g/8oz bread, preferably stale, crusts removed
250ml/½ pint milk
150g/6oz mixed dried fruit
50g/2oz mixed peel, chopped
50g/2oz soft brown sugar
50g/2oz suet
2 tsp mixed spice
1 large egg, beaten
ground nutmeg (optional)
icing sugar or caster sugar to decorate
Method
1. Break bread into small pieces and place in a mixing bowl.
2. Pour over the milk and leave to soak for 30 minutes, then beat out the lumps with a fork to form a smooth mixture.
3. Add the fruit, mixed peel, sugar, suet, spice and egg and mix well.
4. Pour the mixture into a greased 18cm/7in square tin, smooth the top and sprinkle with nutmeg if liked.
5. Bake at 180C/350F/Gas4 for about 1-1½ hours until browned. Cool in the tin.
6. Cut the pudding into squares and sprinkle with caster or icing sugar. Alternatively serve hot with custard or cream.

Bread and Butter Pudding (English Style)
For a (22 X 28 cm) casserole or pie dish:
Ingredients:
6 slices of stale (nicht frisch) or fresh toastbread
40 g butter
2½ cups of fresh milk
3 eggs
¼ cup castor sugar (Zucker Raffinade)
1 tsp vanilla essence (liquid/flüssig)
½ cup sultanas
Method:
1. Spread each slice with butter. Trim away crusts (Kruste) and cut each slice into four small triangles (Dreieckige). In a casserole or pie dish (Auflaufform), arrange the slices of bread so that they overlap each other with sultanas (one or two) in between slices.
2. Pour milk into mixing bowl and then add sugar, vanilla essence and eggs. Whisk mixture until well mixed (note: there is no need to whisk mixture until frothy/schäumig). Pour half of mixture on slices of bread until well covered and let it soak for 10 minutes.
3. Whisk the balance of mixture again and add in balance of sultanas. Pour over the bread mixture in dish.
4. Place dish in a pan of boiling water. Ensure that the water is about two-thirds the level of dish.
5. Bake in a moderately slow oven (150 - 160ºC) for 50 - 60 minutes or until custard is set. This pudding can be eaten warm or cold. For storage, the pudding must be kept in the fridge.

BREAD PUDDING
1 cup bread
2 cups milk
2 eggs
2 Tablespoons sugar
1/4 cup sugar
grated lemon rind
lemon flavoring
Remove crusts from bread. Pour milk over soft bread. Allow to stand until soft, about 30 minutes.
Separate eggs.
Add egg yolks, slightly beaten, 2 Tablespoons sugar, and grated rind of 1 lemon.
Pour into buttered baking dish and set in pan of water to bake until it sets.
Beat egg whites until stiff, gradually adding scant 1/4 cup sugar while beating, and a dash of lemon extract, lemoncello, or lemon juice (whatever you have). Spread the egg white mixture out on top of the pudding while still warm, then return to oven until slightly golden brown.
Cool, and just before serving add a spoon of tart jelly in the center of the meringue of each serving

5 slices of fruit bread
1/4 cup of Castor sugar
2 cups milk
2 eggs
1 teaspoon cinnamon (I use allspice)
2-3 tablespoons butter or margarine
Grease dish with butter or margarine, per-heat oven to 350 degrees F.
Butter each slice of bread, cut into diagonal halves, and half again, (Little triangles) place into dish, slightly over laying each piece as you go. Beat eggs add milk, sugar and spice beat again until sugar has dissolved. Pour over bread and let sit for about 15-20 minutes, (to let the egg mix to absorb, then bake for 30 minutes or until a pale golden brown.
Serve with cream/ice cream or brown sugar
Serves 4-6 people
You can use plain bread and add cup of sultana's
yum oh!

Stale bread soaked overnight in milk
Add sugar, butter, and a few raisins
Plus; spices like nutmeg, cinnamon and a little vanilla flavouring.
Mix together and put in oven at about 200
