I made a wonderful, French eggplant and tomato casserole from my Deone Lucas cookbook. I followed the recipe exactly as stated. It came out pretty good, though a bit too salty for my taste, due to salting the eggplant slices to tenderize them.

12 hours later, I'm watching FoodTV and Wolfgang is making an eggplant and tomato casserole. The tips were amazing! I saw that I added too much salt to the eggplant (though I rinsed it off), I should have added sugar to my tomatoes, and my homemade breadcrumbs would have toasted in the oven (saving me a step).

I need to watch more TV!

if u ever feel like watching anymore cooking shows, look up Rachel Ray to find out what time her show is on. she makes some fabulous dishes. they are simply wonderful. there is also a website: http://allrecipes.com/ that has too many dishes that i would know what to do with. u name it, they got it. and there's also TBS Diner and a Movie. they make good dishes too. sure they make them big enough for a household on 8 people, but they're great as well. i think they have the recipes listed somewhere on tbs.com.

well if u go on sky plues u can learn 2 cook more and make a great dish thats how my mom learnt and i would love 2 tast some
