Breakfast is the most important meal of the day. People who eat breakfast are on average thinner than people who do not. So instead of eating just apples, I think you should cut them up and put them in a bowl of oatmeal. Also, oatmeal is a good source of fiber, and regular fiber intake helps slim your waistline.
Also, drink hot green tea. About 2 cups every day. I drink the brand name BIGELOW because I find it to be the best. You can buy it at Albertson's, Vons, Ralph's, even Target.
Instead of sitting on your chair all day, exchange it for a stability exercise ball. If you are under 5'4" you need one that is 55cm. If you are taller get one that is 65 cm. You can get a ball at Ross, Target, Amazon.com, Big 5, Sport Chalet... everywhere, and some even come with a pump and exercise DVD.
Drink glasses of lowfat or nonfat soymilk. You can get these at Whole Foods, Albertson's, Trader Joe's, Ralph's Vons. Not only is soymilk very healthy for you, but it contains a lot of calcium, and calcium helps women regulate their weight. It is also better than regular milk.
As far as eating when you are nervous. You need to be aware of this and before you reach for a bad snack, ask yourself why am I eating this? Am I even hungry? And if you are just nervous, breathe deeply to calm yourself. You'll feel better afterward.
You said you have no time for exercise, but maybe wake up just 15 minutes earlier than usual to walk. You will be amazed at how much weight you can lose just by walking daily.

Ok well try getting up 30mins earlier and go for a short walk. Exercising in the morning burns more fat than any other time of the day and it also boosts your metabolism for the day!
For breakfast try having a small bowl of whole grain cereal.
Snack: Fruit
Lunch: Salad or whole grain bread with salad and lean meat filling
Snack: Fruit or small yoghurt or few natural nuts
Dinner: lean meat and vegetables.
Eating 5-6 small meals a day is better than 3 big or medium ones! If possible try to do something active in your lunch break even if it is just a short walk. Maybe join a fitness group on weekends - it will be more fun joining in with other people.

I'm not sure how busy you are at work, but it would be advisable to have 4-6 small meals a day. I'm assuming you have one at home, you could try to fit at least 2 or more small meals at work, and another one when you get home. In relation to exercise such as cardio, you can try to fit it in before you head out in the morning (i.e. wake up 1hr early). It is also good to do some resistance/weight training, building more muscle with help burn more fat as well.

Relax your big day is coming.Just keep yourself inspired do your exercise and eat sensbly drink a lot of liquid or water/soup..Fiber will curb appetite so ate your salad. I eat Tabouleh and soup with exercise.Work on me.

well the apples are good. but try to avoid baked goods, eat bread instead. baked goods contain a lot of sugar fat, and fiber. eat bread instead.
Also try to avoid soda, it also has a lot of sugar in it (a can of cola is the same as a cup of tea with 22 spoons full of sugar) to get movement in your life you could try walking or cycling to work, or to where you teach.
