Preservatives can be classified as Class I and Class II preservatives. Class II are chemical preservatives like SO2, citric acid and many others. Class I preservatives are natural preservatives. Ex:

Salt - pickles (10%)
Sugar - Fruit pulps, Jams and Jellies (60% brix)
Honey - confectionery
