I need a kind of EASY Chinese recipe that children would like*. I need to whip it up fast though!! If anyone has ideas, I would be very happy!

Haha, always ask a Native! Now for a simple egg roll:

1. Need a few eggs, 4 or 5, depending on the little hungry stomachs that are growling...combine with three small cups of flour, water to make it smooth and free of bubbles and congealed balls, and beat them fast into a bowl.

2. Prepare chopped long lengthed green onions and cilantro, along with chopped barbequed long slices of grilled duck or pork. If such chinese styled pork or duck cannot be found, use Ham, chinese as substitute, for authentic traditional flavors, use Chinese braised duck, Chao Siew meat, and grilled pork. DO NOT USE LETTUCES! the whole thing will soak!

3. Prepare a light dipping sauce to go, you may have to acquire this from Chinese market, or, just mix chinese vinegar with Sesame oil. Be creative in this part, use whatever sauce your children love and crave for. (^__^)

4. Pour the mixture of egg+flour into saucepan with Olive Oil and let the mixture spread round and thin into the pan. Use medium fire and neve use super hot fire, otherwise the rolls will come out toasted black. Do this with as many batter you have and make them nice and thin. When the batter is in the pan, rotate the pan round and around to make sure the batter smooths into a large thin pan cake in your pan.

5. NOw! Take them out of the pan and on the dishes, mind the temperature, and add the green onion+cilantro+Chinese duck+pork fillings and roll them, add some cheese to increase your children's calcium intake, and now!

6. Bonappetitte

My professor mentioned in BIOL 54 that olive oil is better compared to corn oil or even animal grease. Use Olive oil, they're great for your children.

Fried Rice is really easy and quick. (5-10 minutes depending if you use meat)

Ingredients: eggs, green onion, minute rice, soy sause, and any kind of meat.( you might not want to tell the kids there are eggs in it. The soy sause kind of hides the flavor anyways but it adds a good tecture)

1. Start making your rice
2. cook your choice of meat with a little bit of olive oil (or use pre- cooked meat and just heat it up)
3. while your meat is cooking scramble some eggs and cook them with olive oil and salt until they are barely done
4.set your eggs aside and use the skillet to stir fry your rice in (make sure there is still enough olive oil to lightly fry it)
5. put in some soy sause and chopped green onions in rice
6. Mix all together and cook for about 45 seconds to mix flavors
7. Serve

This is one you could make ahead and put on in the morning to be ready when it's dinner time.

Sweet and Sour Meatballs over Rice
1 pound ground beef
1 slightly beaten egg
4 tablespoons cornstarch, divided
1 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon dried chopped onion
1 tablespoon oil
3 tablespoons vinegar
15 ounces pineapple chunks in juice
1/2 cup sugar
1 tablespoon soy sauce
1 large green bell pepper, cut into pieces
hot cooked rice
In a bowl, combine ground beef, egg, 1 tablespoon cornstarch, salt, pepper, and onion. Shape into 1 1/2-inch balls. In a large skillet, lightly brown meatballs in oil. Drain fat from skillet. Transfer meatballs to any size Crock-Pot. Stir together in a small bowl: vinegar, sugar, soy sauce, remaining cornstarch, and green pepper. Pour over meatballs. cover and cook on LOW 6 to 8 hours or on HIGH 2 to 4 hours. In the last 30 minutes of cooking stir in the can of pineapple. Serve over hot cooked rice.
