I love to cook fish. Here's what I use. Equal parts flour and italian bread crumbs, a few Tbls. of seasoned salt, 1 Tbls garlic salt. Take the fish, rinse well and pat dry. Dip the pieces in egg, water or milk. Coat with mixture and fry til crisp. You can use the same recipe for baked fish. But if you're baking it, just sprinkle fish a little with lemon juice after coating it with mixture. And make sure you put some pam or oil on the bottom of a casserole dish so the fish won't stick when you remove it. As far as side dishes go, I love either mashed potatoes, french fries or cole slaw. But a garden salad, steamed broccoli, pinto beans or cooked carrots also work nicely. Hope this helps!

Here is my version of Pan Fried Fish.
Quick and easy.
This is great with fresh caught lake fish such as crappies, blue gill, cat fish, but works well with cod, ocean perch, flounder and cod. For catfish, I soak the catfish at least 2 hours or overnight in some buttermilk. This will assure an good tasting catfish.

For each pound of filleted fish:
1 lemon
1 1/2 cup of white corn meal mix
1 Tablespoon of seasoned salt
2 tsp. Cajun spice
1/4 tsp. pepper
1 egg
1/4 cup milk

1/4 cup canola or peanut oil
Put oil in 12 inch skillet or two 10 inch skillets. Turn heat to med. or a little higher depending on you range.

Using a zip lock bag, 1 gallon size to put dry ingredients in. Seal and Shake.
Squeeze a little lemon juice on each fillet.

Beat egg and milk together, dip fish in this mixture to coat. Then put each piece of fish in the bag one at a time. Place fish in skillet, then fry until the bottom is looking a light golden brown. peek a little but don't disturb the fish. This will help the breading stay on the fish. Turn once only... When other side is looking the same color, fish is done. Do not overcook fish as it will be dry, tasteless and tough.

I usually serve Cole slaw and macaroni and cheese with this.

3-4 tbsp. vegetable oil
1 lb. tilapia fillets, thawed if frozen
1 cup flour
1 egg plus 3 tbsp. water, beaten very well
1 cup flour mixed w/ seasoning salt or cajun seasoning

Heat oil in heavy-bottomed skillet (I use a cast iron skillet, works great). Cut fillets into manageable pieces. Dredge fish in flour, then in egg wash and in seasoned flour. Repeat egg wash and seasoned flour if you wish. Allow oil to become very hot and place fish in oil. Allow to cook 3-5 minutes per side or until fish is golden brown. Remove from heat and place on brown paper bags to wick away excess oil. Season with salt right away. Great served with fries, coleslaw and hushpuppies.
