A fat is commonly thought as a triglyceride that is solid at room temperature, while an oil is a triglyceride that is liquid at room temperature. A triglyceride molecule is composed of three fatty acids esterified to one molecule of glycerine. The fatty acids may be saturated, monounsaturated, or polyunsaturated, depending upon the number of double bonds in the fatty acid molecule. Oleic acid, for instance, is identical to stearic acid except that it contains a double bond.
