Palm olein is the liquid fraction obtained by fractionation of palm oil after crystallization at controlled temperatures. The physical characteristics of palm olein differ from those of palm oil. It is fully liquid in warm climates and has a narrow range of glycerides.

The major fatty acids are 16:0 (40%) [palmitic]; 18:1 (43%) [oleic]; and 18:2 (11%) [linoleic] - or you could define it as 45% saturated fats, 42% monounsaturated and 11% polyunsaturated.
