Things that you can make ahead are great. Like appetizer meat balls. Otherwise I would hire a caterer or get help from friends. You don't want to be doing appetizers at the last minute at your own vow renewal.

How about some sort of chicken strips? Easy to bake up no problem. Other ideas are cheese & cracker platters. Cut up fruits & veggies as well & put them on platters. This can normally be done the night before, depending on what you use in the platters.
Or you can have some sort of sandwich buffet. My cousin did this at my wedding. Have various breads, french bread cut up, crosints, etc. Put out toppings, various meats, some basic veggies like lettuce, then dressings has mayo & such. That could be quick & easy for you to put out without much work for you.

You might have better luck adding this under a food related category. The only appetizers I can make are those frozen pizza rolls.

Shrimp cocktail. Easy to make, just boil the shrimp and serve with cocktail sauce or you can get a ready-made platter from the local super market. Everybody loves it too

just make it simple. I would do fruit skewers, maybe even a chocolate fountain (that would be fun yet elegant). But, do something easy.
