I remember my grandmother and my mother making what they called "Sour Potato Soup." It was a German recipe that they made from memory, and they are gone now & so is the recipe. It was made with fried bacon, diced potatoes, I think diced onion, vinegar, maybe a little cream. The broth was clear, the cream just curdled a bit on the potatoes. They also made something they called "Wilted Lettuce," made with bacon and leaf lettuce and vinegar. Does anyone know how to make these old recipes?

Ok for wilted lettuce I don't have a recipe...just do it by sight and proportions can be whatever you prefer...

1 large onion, chopped fine
1 tsp. chopped garlic (optional)
some fried bacon (and then break it up into pieces)
some cut up mushrooms (optional or for vegan version)
some cubed tofu (optional or for vegan version)
sesame oil for frying (vegan version only)
about one large bunch of romaine or several small bunches.
apple cider vinegar
water

In a large skillet, fry bacon, drain any excessive amount of fat, break the bacon up and return it to the skillet and saute onions and garlic (mushrooms, tofu...all in sesame oil if making vegan version without bacon) until soft. Add romaine lettuce to the skillet after cleaning leaves and separating them. Right away add some vinegar to about 1/4 of the way up the skillet depth and add approx. equal water so that skillet liquid is about 1/2 way up the depth of the skillet. Cook in skillet and cover with lid and allow lettuce to wilt, stirring mix as needed until all the lettuce is wilted.Serve hot.

It is very good on a cold winter's day.If you make it too vinegary open some windows (it can open your sinuses really good).

German Potato Soup

1 leek -- trimmed and chopped
2 carrots -- peeled and diced
1 cup chopped cabbage
1/4 cup chopped parsley
4 cups beef broth
1 pound potatoes -- washed and diced
1 bay leaf
2 teaspoons black pepper
1 teaspoon salt
1/2 teaspoon caraway seed
1/4 teaspoon nutmeg
1/2 cup sour cream

Combine onion, leek, carrots, cabbage, parsley, broth, and potatoes to Crock-Po
t. Stir in seasonings. cover and cook on Low 8 to 10 hours or High 4 to 5 hou
rs. Remove bay leaf. Using a slotted spoon remove potatoes and mash. Combine
potatoes with sour cream. Return to Crock-Pot and stir. Stir in bacon pieces
. Serve.

Serves 6 to 8

For the 6-quart, use 6 cups of beef broth, 2 leeks, 3 carrots,dices, and 2 poun
ds of potatoes. Season as desired.

Here is an easy POTATO SOUP INGREDIENTS 4 potatoes - peeled and cubed 3 stalks celery, chopped 2 teaspoons dried onion flakes 2 quarts water 2 cups milk 1/2 cup unsalted butter 1 cup potato flakes salt and pepper to taste DIRECTIONS In a large pot over high heat, combine the potatoes, celery and onion with the water and bring to a boil. Reduce heat to low and simmer for 20 minutes. Drain the water, reserving 2 cups of water in the pot. Add the milk, butter and potato flakes. Stir all together well until thickened, about 5 minutes. Season with salt and pepper to taste. I pre-cook my veggies in a glass pie plate in the microwave to get the soup ready quicker.(optional suggestion) The added Potato flakes will thicken the soup

Hearty german sour cream soup:

2¼ hours 15 min prep
6 servings

1/2 lb bacon, diced
1/4 cup rice
3/4 cup cabbage, chopped
2 cups white sauce
1/2 cup onions, chopped
1/2 cup vinegar
1/2 cup celery, chopped
1 clove garlic, minced
1/2 cup carrots, chopped
1 teaspoon caraway seeds
3/4 cup potatoes, chopped
1 teaspoon salt
3/4 cup zucchini, sliced
2 teaspoons Worcestershire sauce
4 cups tomatoes, peeled
1/4 teaspoon thyme
4 cups beef broth
1 cup sour cream or plain yogurt
1/4 cup barley

1. Saute bacon in heavy kettle.
2. Add cabbage, onion, celery, carrots, potato.
3. and zucchini; reduce heat and simmer about 20 minutes.
4. Add tomatoes, beef broth, barley, and rice; simmer 2 hours.
5. Blend in white sauce, vinegar, garlic, caraway seed, salt, worcestershire, and thyme.
6. Simmer about 15 minutes.
7. Adjust seasonings if necessary.
8. Garnish with sour cream and serve.

WILTED LEAF LETTUCE SALAD

2 lg. bunches leaf lettuce
2 tsp. sugar
2 green onions, sliced
4 slices bacon
1/4 c. salad vinegar
2 tbsp. water
2 hard cooked eggs, quartered

Tear lettuce into bowl, season with salt and pepper. Add sugar and onions. Fry bacon crisp and crumble. Add vinegar and water to drippings, heat to boiling point. Pour over lettuce. Toss until wilted. Add bacon and garnish with quartered eggs.


And, thanks a lot....now i'm craving it......

and, gotta use the eggs.....and tha bacon grease.....makes it da bomb.

All fruits are fruit and vegetables. A "vegetable" is a plant, any part of which can be used for food.

In the superstore, fruits are usually picked out much too soon. Some are rocks, many are bad. Some of the fresh vegetables are generally right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.
