In terms of bacterial diseases very few. You see, your body is set up really rather well. Your mouth is slighty alkaline, your stomach is very acidic, and your intestines are alkaline. Very few bacteria can survive the stomach AND the intestines. Those which do often do it only because they ended up inside a fat globual which protected them.

A lot of infectious diseases are spread through the air, and most of the GI tract infections are caused by people not washing their hands before touching their mouth/face.

I don't know of an exact percentage of disease that is caused by what we eat, but I do know that there are only two real causes of disease; Toxins and Parasites. This is from Dr. Clark's book, "The Cure For All Diseases," which I highly recommend (see the links below). Therefore, I try and limit my exposure to both of these things. And, we can get both of them from the foods that we eat, as well from our envirnoment. And, I do agree that changing what one eats and the quality (pure and organic whenever possible) of what one eats can make a big difference in our health. However, we all need to be careful of the "spin" from the food industry and the chemical industry in this country as they spend millions of $$$ per year in advertising to try and get us to eat and consume everything that they want to market to us. And, the sad thing is that most of the processed foods that are marketed to us is devoid of any serious nutrition and contains all kind of Toxins.

Given what I have read in the last two years, the vast majority. That should come as no surprise, after all what we eat is absorbed into our system; our organs, etc. Many homeopaths will tell you that many people can and have been healed by changing their diet.
