The word that you are looking for is speciation.
Speciation, What Is a Species? One of the best definitions is that of the evolutionary biologist Ernst Mayr: A species is an actually or potentially interbreeding population that does not interbreed with other such populations when there is opportunity to do so.
Note: sometimes breeding may take place (as it can between a horse and a donkey) but if so, the offspring are not so fertile and/or well adapted as the parents (the mule produced is sterile).

There has actually never been any proof of gradual changes to any species ever except for in viruses and bacteria, the fossils discovered have never shown anything half monkey/half man or half lizard/half bird, - only fully formed independent species.

Viruses and bacteria do change their DNA in order to deal with threats such as the immune system and antibiotics etc. but their appearance and behavior remains the same and the go back to the way they where when they do not experience a threat for a period of time.

evolution. evulation is the gradual change of undesirable or unsustainable traits being eliminated while desirable or life sustainable traits proliferating. Look up Darwinism.

if you are talking about species composition, the word you might be after is 'sucession', i.e. where a grassland might revert back to forest for example.
