I mean, when it becomes an acid. Will it be clasified as glycolic acid?

it is fermented into acetaldehyde which is further converted to ethyl alcohol.
didnt quite get the glycolic acid part of your question.

Sugar ferments into alcohol.

Pretty sure on that point.
