Just explain it to your teachers. CD players aren't allowed at my school but I asked my teachers if I could leave the CD player on my desk (without headphones) because I was testing which batteries were the best and they allowed it. Talk to them and you'll get results.

Substitute it with another substance- chewing sugar sticks. There is no reason why this has to be gum since you are testing the sugar rush with a repetitive motion. In fact you'd have a better experiment if you had some groups chew something like rubber and another group simply ingest some sugar. I would also talk to your parents about your science program if you were allowed to develop this as a hypothesis. Most projects do not allow experimentation on people.

Prehaps you could do this on off time. Have them chew gum for a certain amount of time before or after school and take it from there. Or you could tell them that they are interfering with science and could they just allow this for a certain time period. I hope you have good luck you are to be commended for your work.
