About 5 days. Any time after that (especially if they're not covered or sealed tightly), other flavors of foods from your refrigerator will seep into them.

Most are pumped full of preservatives and/or smoked, so they will last a good while. I'd say 2-3 weeks after opening, ir store in air-tight manner. That is for pre-packaged cold cuts.
For deli-sliced ones to order, no more than 3 days.

Usually one week, if their fresh. Th packaged ones can usually last up to two.
