I like your last name, really..Why you don't like it? If I am not wrong, apart that is undoubtedly Slavic, it's Russian and very distinctive. What would you say about the too frequent surnames like Smith, Rey, etc. I behold them as boring..Written in Cyrillic looks like that Йевдокимов I suppose.

Although it's a non-English (Russian?) name I think any person with any intelligence should still be able to pronounce it.
Americans have a tendency to like short surnames as shown by surveys. However, there are still many British and American lastnames that are long, even exotic, like Abernathy, Amundsen, Delahanty, Duchovny, Fotheringill, Foxworthy, MacClellan, McConaughey, Hathaway, Llewellyn, Pennington, Richardson, Rockefeller etc. so, on top of all this, I wouldn't worry too much about 'Yevdokimov'.
Actors , singers and disc jockeys are often encouraged to change their names but unless you plan to go into one of these professions, I'd leave your last name just the way it is.
