Even if you are adult (above 20yrs old) you are still expected to leave and come back within a specified time (say, before 11:00pm at night). Is that true?

Not usually. You are expected to be able to determine what the best times for waking and sleeping are for yourself when you reach college.

I understand from some friends that have gone to religious "colleges" that they can have stricter rules like curfews, etc.

I often got back from the computer lab after 3am since the demand was a lot less at that time. No problems.

Unless you go to a religious school or other strict school, there aren't curfews. I went to a women's college. We had an honor code and rules about when men could be in the dorms but the students were allowed to come and go as they wished. Students have keys or more likely cards they let them into their dorms at any time. Some buildings will be locked at a certain hour. For example, class room buildings or libraries. However you should at least have access to a computer lab at any time.

I went to a state college in upstate NY in the early 80's and they didn't back then, in a coed dorm. But they did have strict rules about keeping the front and foyer doors locked and securely bolted after a certain evening hour, but of course we all had keys.

I just graduate college. I lived in the dorms as a freshman. If you are going to a public college there are no curfews. There are noise curfews though, so just be considerate.

We didn't have a curfew at all at the college I went to in Colorado, but that's the only one I really know about.

Yes. Many also even regulate who can and can't be in your dorm. Many campuses have a strict no-boys-in-girls'-dorms rules and vice versa.

Depends on how strict it is. That could be a Catholic College.

The doors where I go to school lock at 10pm, but as long as you have a key you can come and go as you please.
