Easy Berry and Chocolate Mousse
6-8 servings 40 min 35 min prep

2 cups blueberries
2 cups raspberries
1 cup blackberries (optional)
semi-sweet chocolate chips
1 large hershey special dark chocolate bar
1 tablespoon milk (optional)
2 (8 ounce) containers Cool Whip (thawed)

1. Finely chop all berries in food processer, but set aside enough berries to.
put on top of each bowlful of mousse (each kind of berry will be on every.
mousse).
2. Next put broken up bar of dark chocolate in a bowl in the microwave for 30.
sec. at a time (until almost all melted).
3. Add the T of milk if too thick.
4. Put the thawed Cool Whip in a bowl & FOLD in mixed berries.
5. Now FOLD in dark chocolate slowly until combined with the mousse.
6. Fill about 6-8 ramicans OR small bowls with mousse.
7. Melt chocolate chips in microwave for 30 sec. at a time until melted.
8. Spoon melted choco. chips onto mousse until the top if pretty much covered.
9. Add one blueberry, blackberry, and raspberry to each bowl of mousse while.
chocolate is still semi-melted.
10. Chill in fridge for at least 1 hour.
11. Serve.

Here is a old-time dessert easy -- fast and delicious!!


4 pieces toast
4 slices cheese
Nutmeg
1 1/2 c. applesauce
1/4 c. sugar

Add sugar and nutmeg to applesauce. Put applesauce on toast, about 3 tablespoons on each piece of toast. Lay a slice of cheese over the sauce. Bake in a moderate oven until the cheese melts. Serve hot.

Hot Fudge Pudding Cake
During the baking a cakelayer forms on top and a rich chocolate sauce appears on botton. Serve with vanilla ice cream or whip cream.

1 cup Bisquick
1 cup sugar
3 tablspoons plus 1/3 cup of unsweetened cocoa powder
1/2 cup milk
1 tp vanilla
1 2/3 cup hot water
Powdered sugar (optional)

Mix bisquick 1/2 cup sugar and 3 tbs cocoa in a greased 8 inch square baking dish. Stir in milk and vanilla until well blended. Sprinkle evenly with remaining 1/3 cup cocoa and 1/2 cup sugar. Pour on water. Bake in preheated 350 F oven for 40 minutes or until top is firm. Dust with powdered sugar. Serve at once in bowl with sauce spooned over cake. Make 6 servings.

Yellow Cupcakes

3/4 cup butter
1 cup sugar
1 1/2 cups flour, sifted
1/4 teaspoon salt, finely chopped
1/2 cup milk, room temperature
3/4 teaspoon vanilla extract
3 large eggs

I recommend using Crisco:Butter Flavored instead of actual butter. Gives it more pizazz.

Directions:
Preheat over to 350
Sift and combine dry ingredients. (except sugar)
Cream together butter, sugar and eggs.
Add the two mixtures together. Combine well.
Add milk. Combine.
Add vanilla. Stir.
Bake for about 10-11 minutes.

This is my favorite quick stand-by.

1 pkg pistachio pudding mix
1 can (~15 oz) crushed pineapple, slightly drained
1 tub Cool Whip
1 graham cracker crust (try to get the double serving size)

Dump the pinapple in a bowl and sprinkle the mix over it. Stir and let sit for 10 minutes. Fold in the Cool Whip, put it in the crust and refrigerate for about 4 hours.

Literally, easy as pie!

Strawberry Pretzel Squares

2 cups finely crushed pretzels
1/2 cup sugar, divided
2/3 cup butter or margarine, melted
12 ounces PHILADELPHIA Cream Cheese, softened
2 tablespoons milk
1 cup thawed COOL WHIP Whipped Topping
2 cups boiling water
1 pkg. (8 serving size) JELL-O Brand Strawberry Flavor Gelatin
1 1/2 cups cold water
1 quart strawberries, sliced

Preheat oven to 350 degrees F. Mix pretzels, 1/4 cup of the sugar and the butter. Press firmly onto bottom of 13x9-inch baking pan. Bake 10 min. Cool.
Beat cream cheese, remaining 1/4 cup sugar and milk until well blended. Gently stir in whipped topping. Spread over crust. Refrigerate until ready to use.
Meanwhile, stir boiling water into gelatin in large bowl at least 2 min. until completely dissolved. Stir in cold water. Refrigerate 1-1/2 hours or until thickened (spoon drawn through leaves definite impression). Stir in strawberries. Spoon over cream cheese layer. Refrigerate 3 hours or until firm. Cut into 20 squares to serve. Store leftover dessert in refrigerator.

Here are my top 3 favorite dessert recipes...enjoy!

Apple crisp
5-6 tart apples
2 tablespoons sugar
2 tablespoons lightly packed brown sugar
1 1/2 teaspoons cinnamon
2 tablespoons butter, melted

Topping
3/4 cup flour, plus
2 tablespoons flour
6 tablespoons oatmeal
7 tablespoons sugar
7 tablespoons lightly packed brown sugar
12 tablespoons butter, cut in small pieces

Preheat oven to 375 degrees F.
Put apples, sugars, and cinnamon in a 1 1/2 quart casserole dish.
Stir to combine.
Let sit about 20 minutes until some juice is released from the apples.
Combine flour, oatmeal and sugars.
Mix in the butter until it resembles coarse crumbs.
Pour melted 2 tbsp butter over apple mixture in the casserole.
Sprinkle with topping mixture.
Bake 30-40 minutes until topping is golden and filling is bubbling.
Serve warm or at room temperature. Taste great with vanilla ice cream!

Best carrot cake
1 1/2 cups oil
2 cups sugar
4 eggs
2 cups flour
2 teaspoons baking soda
1 pinch salt
3 cups grated carrots (fully packed)
2 teaspoons cinnamon
1 teaspoon vanilla
Icing
1/4 lb butter
8 ounces cream cheese
1 lb powdered sugar

Beat oil and sugar, then add eggs.
Add and mix the rest of the cake ingredents in the order given Beat for 1 minute.
Pour into 3 9" cake pans.
Bake at 350 degrees for 35 minutes.
Icing: Mix butter and cream cheese together until smooth, then add sugar a little at a time.
Beat until smooth.


These are called "whatever floats your boat" brownies! They are incredible!!!

1/2 cup butter, melted
1/2 cup unsweetened cocoa
1 cup sugar
2 eggs
2 teaspoons vanilla
1/2 cup flour
1/4 teaspoon salt
WHATEVER FLOATS YOUR BOAT
1-2 cup chocolate chips (semisweet, white, butterscotch, peanut butter) or raisins or chopped maraschino cherries or nuts or M&M's or Reese's pieces or miniature marshmallows


Grease an 8 inch square pan or line with foil.
In a medium bowl combine melted butter and cocoa and stir until cocoa is dissolved.
Add sugar and mix well.
Add eggs one at a time and stir until well combined.
Stir in vanilla, flour and salt until you no longer see any flour (do not overmix).
Fold in"WHATEVER FLOATS YOUR BOAT"!
Spread in pan and bake for 25 minutes.
Cool completely before cutting into squares.
