I was given a recipe for a chicken dish. It says to dip the chicken into butter then in breadcrumbs. Should I melt the butter or just coat it with hard butter? I have no idea. And if I was to melt it, how do I do that? Microwave it or heat it in a pan on the stove?

Sounds like a baked fried chicken dish. You can use butter, margarine, or any vegetable oil you like.

If you're using butter (it will give the best-tasting results, in my opinion), just put the amount of butter called for in the recipe (2 tablespoons, whatever) in a microwave-safe bowl or container, and cover the container loosely with a lid (or plastic wrap). Nuke it on high for about 20 seconds. The butter may not look completely melted, but trust me, it is.

As for how to go about coating: I'd use a pastry or basting brush. If you don't have access to one of those, just pour the butter into a shallow container, and roll the chicken pieces around in it. The brush method is a little less messy, and there's less to clean up.

You should melt the butter in a shallow dish or bowl in the microwave or melt it on the stove on low and then place it in a shallow container for coating. It only takes a minute or so either way.

You can either melt it in the microwave in a bowl, or a pot on the stove. Melting it will make the coverage more even.

i recommend to microwave it on a glass plate with a little room so you don't spill it when you take it out -- i did the same thing when i made a chicken dish -- always melt it though you can coat it easier Enjoy!
