Every sunday i cook a big Quorn Lasagne so i can stick it in the microwave when i get back from work during the week. I'm fed up eating it every single night tho, lol and need some veggie ideas for something that is easy to cook, and nice. Thanks!!!

Veg chili, veg bolognaise. Do you eat fish? Tuna pasta. You can get a few days out of all of those.

Have you ever done a nice vegetable lasagne? I make a lovely one!
3 courgettes,
2 red onions
1 normal onion
1/4 pint red wine
large tin of tomatoes,
mushrooms
one aubergene
1 green pepper
1 yellow pepper
fresh coriander
lasagne sheets
cheese sauce ( I cheat and but dolmio white lasagne sauce)
grated cheese
fresh parsley
chop all the veg and coriander and then simmer in the tinned tomatoes. Add 1/4 pint of red wine to give a touch of richness. Simmer for about 30 minutes then divide between two layers of lasagne sheets
Pour white sauce over top and top with grated cheese

bake at gas number 5 for half an hour
serve with garlic bread

I used this one alot when I was a student. Add a load of veggies and some drained & rinsed kidney beans to a jar of dolmio sauce and have it over pasta or rice or whatever...you can add some quorn chunks too if you feel so inclined. I used to do that alot, start with a big jar of dolmio and add whatever I had in the fridge to make it last a few days!
You can even take a jar of pasta sauce, add a cup or two of rice and a jar full of water and make tomato rice soup...add some veggies too if you like....whatever you have lying about!
I also kept a vat of chunky vegetable soup in the fridge.
Alternatively, quorn burgers or fillets with some steamed veggies and new potatoes are good.

Country Garden Cottage Pie

2lb /900g potato, mashed
2 tbsp vegetable oil
1 medium onion, chopped
6oz / 150g green lentils
1 clove garlic, crushed
4oz / 100g grated vegetarian cheddar cheese
2 carrots, diced
1tbsp tomato puree
1 medium green pepper, diced
4oz / 60g mushrooms, sliced
1 tsp dried basil
pinch cayenne (optional)
salt and pepper



1. Cook the lentils in plenty of water until just soft, drain, but save ½pint of the cooking liquid.

2. While the lentils are cooking saute the onion, garlic, basil and cayenne in the oil until soft but not brown.

3. Add the carrot, pepper and mushrooms. Cover and cook over a low heat for 10 minutes or until the carrot has softened.

4. Add the cooked lentils, tomato puree and seasoning. If the mixture is very thick add a little of the reserved cooking liquid from the lentils.

5. Cook for a further five minutes, transfer to an oven-proof dish, cover with mashed potato and sprinkle the grated cheese on top.

6. Bake for 30 minutes in a moderate oven, until the top is golden brown.

I'm not a veggie but a recipe I love is Mushroom pie!
It's very much like Shepherds pie but the filling is onions, garlic, mushrooms and a mixture of vegetables (peppers if you like them) and a thick tomato based sauce. This is topped with Mashed potatoes and then browned in the oven. You can make small one meal portions and keep them in the freezer. Pop in the microwave and serve with a fresh salad.

Empty a tin of re-fried beans into a dish top with tortilla chips then cover this in salsa sauce (hot or mild depending on your taste) top with grated cheese, cook in the oven or microwave for about 4 Min's on full heat.Quick and simple after working all day.

Quorn stir fry, fajitas etc etc- they got loads of recepies on their own site. And try looking at eastern recepies as they have loads of vegie idea especialy Indian food and it doesn't have to be spicy- you can experiment and make it even a non spice indian/oriental dish. I do it with western food by combining them with eastern spices cause i'm used to it but I don't see why it can't work the other way!

Apart from stir frys I don't know much about oriental foods so you'll need to research that. But try dishes from around India, each region has its own specialities. You got south Indian dishes (which is popular with all other Indians and westerners seem to love it too as I saw a south Indian rest once full of westerners! I felt out of place but in a nice way and was happy to see this.), Marathi dishes, Bengali dishes. But the most popular are the west Indian dishes from the regions of Punjab Rajasthan and Gujarat.

Look it up theres too large a variety for me to list here. If you go south Indian try their Idli (I eat em cold or grill them the next day yummy!) or their Dhosa (which you will need practice in making as it's a pancake and trust me it takes mastering but its doable). Punjabi and Gujarati dishes are v similar but the way they are cooked and the odd ingridients here and there differ due to difference in regions. For example we both eat kadhi but Gujarati kadhi is very different to Punjabi kadhi but the basis is of the same thing.

Theres thousands of recepies out there on the net and many are different variations of the same thing- you could even put your own variation up there (if its good enough to eat that is!)

Not a lot by the sound of it. Do some internet searches for recipe ideas or get a cook book! There's loads of easy to follow guides and ideas if you look.

Have you tried nut cutlets they take ten mins on a george foreman i have a pepper stir fry or salad with them or grassingtons cheese and leek bakes or wot about ainsley harriets cous cous?get them all holland and barratts or asda! right now im having a veggie omlette only takes minutes to make.

hiya, i know one thats really tasty and filling.

i call it. . . pasta bake 'n' cheeeeeze lol

boil pasta, whist at the same time boiling some milk with butter and pinch salt, when the milk begins to get hot and ever so slightly boil, add the cheese. mix it til it gets a little thick. strain the pasta and mix together with your cheesy sauc (if you like you may chop up some broccili and add it to the mixture, (cooked brocili). let cool a tiny bit, and wallah!!!x x x
