I plan on making the food for my wedding, which will have a cocktail party reception. I only plan on making heavy hor d'Oeuvres. I'd like to know how much of each recipe (at least 7 recipes in total) should I make that will be enough to feed at least 130 people. I'd also like to know how long in advance would I be able to keep the food in the freezer prior to the reception, as well as whether or not I should heat the food when I first prepare it or should I freeze the food, uncooked, and cook it the night/morning before the wedding?

if you are serving cocktail style, figure two pieces of each hor d'oeuvre you will be serving. 130 people means 260 pieces of each. the freezer option depends on exactly what you are making - check your recipes for storage suggestions. some items simply must be prepared just before serving. some things work well in the freezer (like cookies or breads) and just need to be thawed & served. if you are doing all this cooking yourself, i HIGHLY recomend getting one of your friends or family members to help out - particularly the day of the wedding, so that you can just enjoy your day, and not be tearing an apron off just before the services...

I think the most important thing I have found in multiplying any recipe is multiply it by weight and not volume ie. grams instead of cups etc. otherwise the recipe will never turn out
