My mom always removed the stem part from the center but I have heard from other people that you can use the entire clove. Does it matter? Is there a difference in taste or potency?

Yes it matters in taste. I do not like the green stem in garlic and I remove them. But take an older clove that is sprouting a green "stem" and plant it in your window box with your other herbs. You won't get garlic cloves growing, but that green "stem" will grow nicely and can be used in seasoning as it has a mild chive-like taste.

whilst the clove starts to sprout the clove is often previous and could be bitter. i could basically get some clean garlic. yet another project you could try is to pass to the produce component of your food market and purchase peeled garlic cloves. They flavor the comparable and you could consistently tell how fress they are.

If you're garlic has a green stem it's starting to get old. It's still edible, including the green stem but will not taste a fresh as a stemless specimen.

I remove the garlic clove's green center. I find this reduces the garlic breath after eating. Burping up garlic is reduced as well.

Once garlic "goes green" it is both stronger and more bitter.

It really doesn't matter if you remove the green or not, unless you want the color to be uniform.

the stem part from the center makes the garlick stronger and more bitter. So it all depends on how you like it. I personally always use the whole thing.

it doesnt matter. when i cook, i use the whole clove and everything comes out great. more flavor- whats wrong with that?
