The difference between someone dying to prove what water is made of and dying for spreading the Word is HUGE! No one really cares enough to give their life to prove what water's made of because it's not important. Now for Paul to die because he was preaching the Gospel is powerful because the Gospel is the most important thing we have.
Why is what he did important? Paul was very much hands-on involved with the ministry of Christ. Why would he allow himself to be martyred if he knew that the Gospel he was preaching was false?

Well, in the dark ages, you would have been burned by the church for suggesting that water is H2O. When you get killed for that, it brings more attention to the matter than keeping quiet. I would rather be killed for saying that, and get people to think, than allow people to be forced to live in ignorance. It is because people were willing to die for something like that, that the church does not still hold such power.

Paul didn't die for the sake of dying. He just kept on doing what he had to do, and he was eventually executed for that.
