We found a 2004 V6 Silverado with 16000 miles on it. Should we consider a V6 or just look for V8's?

The V6 is pretty underpowered for a full size truck. They depreciate quicker and really do not get any better mpg if you can resist the temptation to step on the V8 often. That particular V6 has been around almost forever, and is pretty low tech. I would consider the V8, and preferably the 5.3 V8 vs the 4.8 V8. It is probably a higher trim level and will be much easier to resell down the road. The V6's are usually only bought for commercial uses and by local/federal governments. I kind of feel you would be more likely to regret a V6 vs a V8.

Did you change the fuel pump and censors, they won't be the same from a V6 to a V8. Also as some one else has already said, computer

If you are not doing any heavy loads or towing the v6 is fine.
