I am making Cordon Bleu and the recipe says the following:

Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.

* Unfortunately, I don't have cooking spray. Should I coat it with butter or Olive oil. Which do you prefer?

Dont use butter. If you use butter it will start to melt even more and it will then start to smoke from being in the hot oven for that long period of time. It is best to do a light coating of olive oil. But make sure you dont use much. Just enough to coat the bottom of the pan.

Olive oil. Better for you than butter. Adds less calories to the food

I prefer to use butter for cakes or sweets, and olive oil for savory dishes, but any kind of fat will do.

Rub the fat on the baking dish or use a brush.

Good baking!

butter will add more flavor, however it will burn easily. so, melt your butter and then mix it with an equal amount of olive oil. that way you will have the butter flavor while having a higher temperature tolerance of olive oil. spread it around in your pan with a paper towel in a very thin layer and you'll be fine.
