Anytime I bake I cover the cookies with saran wrap or put them in a plastic bag. How can I maintain crispness the days after I bake my cookies?

Simple. Improper storage. Humidity can make a crispy cookie turn soggy! So, try putting them in an airtight container. Even cookies left in the fridge will maintain their crispiness. Plastic bags allow air in no matter what you tie them with! If the air is moist, so will be you cookies! So, save them for travel and put your fresh baked goodies in an airtight container! Happy Baking!

Often people store their cookies too soon before they are completely cooled. If you leave them in the kitchen to cool and store them when they are room temperature, you take the chance on mushy or soft cookies because remember, your kitchen will be higher in temperature due to having used the oven and baking. The best thing to do will be to stack the cookies on a cooling rack after you remove them from the baking pan and then after some time, after they reach 'room temperature' transfer them to a plate and set them elsewhere outside the kitchen, such as the dining room.

Afterwards, when you are assured they are completely cooled, wrap them loosely with plastic wrap or transfer them to a cookie jar and they should retain their crispness the following day.

Also, take into consideration that most kitchens tend to be the most humid room in the house due to the cooking and appliances so that will also affect the freshness of foods not stored within the confines of airtight containers.

Plastic keeps and adds moisture to cookies. If you want crisp you should use a cookie jar or leave plastic wrap loose and open a little.

Before putting the cookies in a container make sure that they are cool. And then either put them in a cookie jar or an air-tight container. But really make sure they are cool before putting them away.
