i hav 2 packs of chicken (all kinds; thighs, breats, wings, etc.) and i dont know what to do with them. i need some new chicken recipes!!!

shred all the meat off bones.....cook til almost done....get a couple of cans of bisquits...cut bisquits up in quarters and add with the chicken and one can of chicken broth....cook til bisquits are fluffy and Presto......chicken and dumplings.....

Ingredients
1 chicken cut up or 6 to 8 chicken breast
1 package Lipton Onion Soup Mix
Season-All to taste
1 cup water
3 cups chicken broth
1 cup rice uncooked


Directions
Lightly salty the chicken with Season-All. Bring broth and water to a boil. Add Lipton soup package and mix well. Add the rice to the mixture and pour into the baking pan. Make sure the rice is spread evenly over the bottom of the pan. Place seasoned chicken in pan, cover with foil, and bake for 350 degrees for 1 1/2 hours.

You may use 1 1/2 cups rice, however use 4 cups liquid - 2 cans broth and 2 cups water. One of the more flavorful and least expensive ways to make your broth is to either use the bouillon cubes or Wylers chicken granules. You can also remove the skin to reduce the fat calories.

Grilled Chicken with Blueberry BBQ Sauce Recipe



Making your own BBQ sauce, especially one with a unique flavor such as this one, immediately establishes you as a serious grilling aficionado.

Ingredients
6 bone in chicken breasts
2 cp. fresh blueberries
1/4 cp. balsamic vinegar
3 tbsp honey
3 tbsp ketchup
1/2 tsp garlic powder
1/2 tsp ginger powder
Bring all the ingredients (except the chicken of course) to a low boil in a saucepan. Reduce the heat, and simmer for 10 to 12 minutes until the sauce thickens. Remove from heat and allow the sauce to cool. Pour the BBQ sauce into a blender and blend until smooth.

Put the chicken breasts and a 1/3 cup of BBQ sauce into a zip top bag and coat well. Marinate in the refrigerator for 30 minutes to an hour. Reserve the rest of the sauce for serving. Grill the chicken over medium high until cooked, 7-8 minutes per side. Top the chicken with the BBQ sauce and serve.

MY FAVORITE!!!!

Take 6(change the amounts depending on how much chicken you have... this would work for one pound) cloves of garlic & mash them (you can use a food processor or a mortar & pestle)
add salt, oregano, & a little bit of olive oil..make into a paste

If you have all purpose seasoning sprinkle some all over the chicken then rub the paste all over the chicken breasts (you may want to cut some slits in the chicken to get seasoning inside)

Put in a pan with a little bit of butter to saute (you can also add half a cup of white wine & a tablesppon of lemon juice, this part is optional... I just love how juicey & tasty it comes out)



Serve on top of plain pasta or on the side of rice pilaf

You also do an oven fried recipe.

Make three dipping stations.

first speinkle all purpose seasoning on the chicken

dip chicken into seasoned flour

then an egg wash

then a bowl of italian bread crumbs

Bake on 350 degrees for 15 minutes on each side & enjoy!

For chicken breasts: Chicken nuggets

2 eggs
1/2 cup of water
1/2 cup of milk
1 Tbs Honey (optional)
1 cup of flour
1 tsp baking powder
1 1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder

Beat first 4 ingredients and then add to dry ingredients and mix well. Cut up white skinless boneless chicken breast into 1 inch chunks, mix chunks into the batter. Heat vegetable oil in a skillet, or use a deep fry. Drop chunks into hot cooking oil one at a time, turn them over as they turn golden brown. Place in bowl on a paper towel. Serve and enjoy.

Favorite at my house, everyone loves them!

Chicken in Champagne Sauce

4 boneless chicken breasts
1 tsp thyme
1 tsp seasoned salt (Lawry’s)
1 tsp garlic salt or powder
6 tbs light margarine or butter
2/3 cup Asti Spumante or any sweet wine (use the cheapest you can find)
2 tsp flour (more if needed to thicken)
1 cup half and half or lowfat milk

Sprinkle chicken breasts with all seasonings. Heat butter in frying pan. Brown chicken. Add Asti or wine. Cover pan and simmer about 30- 40 minutes, turning twice, until chicken is tender. Remove chicken and keep warm. Thicken sauce with flour. Stir in half and half and heat sauce. Add chicken to sauce to coat. Makes 4 servings

Quick Chicken Parmesan

4 Boneless Chicken Breasts, pounded flat
1 jar Spaghetti Sauce (I use Prego mushroom and garlic)
3 oz. Mozzarella Cheese, grated
2 cups Italian Bread Crumbs
2 oz. Parmesan Cheese
1/2 tsp garlic salt
1 egg, plus 1 tbs water, slightly beaten

Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings.

2 c. diced, cooked chicken
1 c. thinly sliced celery
1/2 tsp.salt
2 tsp. grated onion
1 c. mayonnaise
2 tbsp. lemon juice
1/2 c. shredded Cheddar cheese
1 c. crushed potato chips

Combine chicken, celery, salt, onion, mayonnaise and lemon juice. Spoon lightly into 1 quart microwave dish. Sprinkle with cheese and potato chips. Bake in microwave - 4 1/2 to 5 minutes, or until mixture is well heated. Serve with assorted crackers. Taylorville, IL

you can bake the chicken then add cream of mushroom soup 9-10 minutes before the chicken is done and put biscuits on top and bake the rest of the way

make chicken parmesean, coat the chicken with seasoned bread crumbs, bake and them pour red sauce over it and sprinkle mozarella cheese over it

you can bake it and then shred it and add your favorite bar-b-que sauce to the chicken and put in hamburger buns for a good bar-b-que chicken sandwich, my husband loves these, Baby Rays Sauce is amazing

if you have a deep fryer you can make hot wings, I recommend using Hooters wing breading and their wing sauce, so good.

you can make chicken salad, or chicken pitas with cheese and lettuce

gosh I'm getting hungry now :D
