You can buy 0% fat sour cream. Chop up some chives on there and it'll taste great.
You can also melt some low-fat cheddar on there but the sour cream would be your best bet for keeping a lower fat intake.

I'm partial to fat free (or lowfat) plain yogurt. It compensates for the dryness of the potato, and I personally think it tastes *better* than sour cream. Plus, you can use as much as you like, guilt-free, since it's actually good for you!
