Creamy Fettuccini Alfredo

1 – 8 oz. Package Philly Cream Cheese (I use the light version – 1/3 less fat), cubed
¾ cup (3 oz.) fresh grated Parmesan cheese (I like De Giorno, don’t use Kraft)
½ cup margarine (I use I Can’t Believe It’s Not Butter Light)
½ cup milk (I use 1% or 2% low fat)
8 oz. fettuccini, cooked, drained (I use the fresh Contadina low fat one, but you can use the dried. Fresh is better)

In large saucepan, combine cream cheese, Parmesan cheese, margarine and milk.
Stir over low heat until smooth. Add to drained fettuccini and toss lightly. Sprinkle with fresh Parmesan cheese if desired. Makes 4 servings.

Serving Suggestions:
I serve this with chicken Parmesan, salad, and garlic bread.

Quick Chicken Parmesan

4 Boneless Chicken Breasts, pounded flat
1 jar Spaghetti Sauce (I use Prego mushroom and garlic)
3 oz. Mozzarella Cheese, grated
2 cups Italian Bread Crumbs
2 oz. Parmesan Cheese
1/2 tsp garlic salt
1 egg, plus 1 tbs water, slightly beaten

Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings.
Enjoy

I use a toaster oven to cook chicken, fish etc. Does this count as an oven? I have 2 microwaves because I found out some things cook for different times. I only use the large oven for pies and cookies. The book stores should have plenty of books on microwave cooking. I used to bake cakes in a microwave about 28 years ago when we got out first one, still have it and use it everyday. I bake potato's in it all the time, about 10 minutes for a potato that weighs 1 pound, Cook for 5 minutes on one side and turn over and cook for the other 5 minutes. if you over cook in a microwave the the food becomes hard in places so watch what you do. Just make sure you punch holes with a fork before you cook it.

A nice casserole is easy to make.
Buy a cheap cut of meat, stewing steak, cut it into bite sized pieces and remove as much fat as you care to. I think some fat improves the taste.
Brown the meat in batches then add a little more oil and do some diced onions until soft then return the meat.
Add mixed herbs salt and pepper and enough stock or water to just cover and simmer gently for at least an hour, stirring occasionally.
After an hour add vegetables of your choice including cubes of spuds and cook for a further 15 minutes until they are cooked.
Taste, add anything you may think it needs, more salt etc, sauce.

You have made a one pot dish that can be served in a bowl, to eat in front of TV or at the table. Any left overs can be frozen or eaten the following day.
I will often curry it the following day and have it on toast with an egg on top

How about pork loins? Just marinate them in a ziplock with a lot of soy sauce, garlic, ginger, sesame oil, and hot sesame oil and some chopped green onions. Do those on the Foreman. Serve with some curried rice and a side veggie.

Trust me, our oven works but I'm getting tired of Hamburger Helper too because we're on a budget.

Yes....I do! Take a medium onion and brown it with a pound of hamburger until done....then drain. Next add 1-1/2 cups of rice and 2 cups of water. Then add a large can of tomato sauce or diced tomatoes, either or. Stir and season, then bring all of the mixture to a rolling boil and then cover and simmer on low until rice is done. Simple!! Add a can or vegetables or salad and you're done!! Good Luck.

Restaurant-Style Buffalo Chicken Wings

oil for deep frying
1/4 cup butter
1/4 cup hot sauce
1 dash ground black pepper
1 dash garlic powder
1/2 cup all-purpose flour
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
10 chicken wings

Heat oil in a deep fryer to 375 degrees F (190 degrees C). The oil should be just enough to cover wings entirely, an inch or so deep. Combine the butter, hot sauce, pepper and garlic powder in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended. Remove from heat and reserve for serving.
In a small bowl mix together the flour, paprika, cayenne pepper and salt. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated. Cover dish or bowl and refrigerate for 60 to 90 minutes.
Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. Remove from heat, place wings in serving bowl, add hot sauce mixture and stir together. Serve.

spaghetti is good, so is chili, tuna and noodles, rice with stir fry, you can boil a small chicken on the stove in an hour and then pull off bone and add to your kind of rice of choice, yellow or white. most of these meals last a while too. good luck. :D
