I would like some good easy recipes for tastey dinners. It seems like we have spaghetti, burritos/enchiladas/tacos and then stirfry..and then start over again. I would like some new things to mix it up a little. Please no recipes with seafood or a lot of onions. Also there will be a toddler eating this dinner so either nonspicy ..or spice on the side would be good. Thanks!

Cashew Chicken
1 pound boneless skinless chicken breast, cut into 1 inch cubes
1 medium onion chopped
2 cups frozen broccoli cuts,
1 3 cups of boiling water
1 cup uncooked long grain rice
1 jar (6 ounce) sliced mushrooms drained
1 tablespoon chicken boulilon granules
1/2 to 1 teaspoon ground ginger
pepper to taste
3/4 cup salted cashews, divided

In a large bowl combine the first 9 ingredience and transfer t o a greased shallow baking pan. cover and bake at 375 for 45 to 55 minutes. sprinkle with the remaining cashews.
It is really easy .

Bubble Pizza

1 1/2 lb hamburger, browned and drained
2 tubes biscuits, cut into quarters
16 oz pizza sauce
2 cups cheddar cheese, shredded
2 cups moz cheese, shredded

Stir together hamburger, sauce and half of the cheese. Place in a 9x13 casserole pan. Place cut up biscuits on top. Sprinkle remaining cheese on top. Bake at 400 degrees for 20 minutes or until the biscuits are done. Serve with Garlic Bread and a Lettuce Salad.

I took this one out of the oven an hour ago, and I patted myself on the back after tasting it!

Eggplant with Mushrooms, Tomatoes and Shallots

2 Eggplants, peeled and sliced
Olive oil
1 container of Sliced mushrooms
1/2 cup of chopped shallots
1 tablespoon of Dijon mustard
2 teaspoons of chopped garlic
1/2 stick of butter
1/2 cup of Parsley (I used cilantro)
3 tomatoes, sliced
Breadcrumbs (I made my own)

Salt the eggplant (this makes them tender) for 30 minutes. Rinse THOROUGHLY, or they will be salty.
Sautee the slices a few at a time in olive oil, until golden brown on each side. Add oil as needed.
Place in a casserole dish.
Preheat the oven to 400 degrees.

In the same pan the eggplant was sauteed in, cook the mushrooms with a little salt (to prevent them from "bleeding."
Add shallots, garlic, Dijon mustard, and pepper.
Cook for 7 minutes on low heat.

Put the sliced tomatoes on the eggplant.

Add parsley and butter to the mushrooms.
Spoon the mushrooms over the tomatoes.
Sprinkle with breadcrumbs.

Bake for 10 minutes.

Salsa Mac and Beef: 1lb Ground Beef browned, mixed with a box of Velveeta Shells, and Cheese.... Add a can of Corn, and 1/2 cup salsa (more per taste). Very good.

Stick a roast in the slowcooker...... either eat w/fake mashed potatoes and a canned veggies, or you can shred the meat, put some butter and vinegar on it, reheat, and serve as barbeque sandwiches. (Yummy!)

Fettunine Alfredo: Canned Alfredo sauce, noodles, and any additional items such as shrimp, chicken, mushrooms, ect.

Chili - Very easy to make. Some recipes if you look them up, have very little ingredients and are good.

Creamy Fettuccini Alfredo

1 – 8 oz. Package Philly Cream Cheese (I use the light version – 1/3 less fat), cubed
¾ cup (3 oz.) fresh grated Parmesan cheese (I like De Giorno, don’t use Kraft)
½ cup margarine (I use I Can’t Believe It’s Not Butter Light)
½ cup milk (I use 1% or 2% low fat)
8 oz. fettuccini, cooked, drained (I use the fresh Contadina low fat one)

In large saucepan, combine cream cheese, Parmesan cheese, margarine and milk.
Stir over low heat until smooth. Add to drained fettuccini and toss lightly. Sprinkle with fresh Parmesan cheese if desired. Makes 4 servings.

Serving Suggestions:
I serve this with chicken Parmesan, salad, and garlic bread.

Quick Chicken Parmesan

4 Boneless Chicken Breasts, pounded flat
1 jar Spaghetti Sauce (I use Prego mushroom and garlic)
3 oz. Mozzarella Cheese, grated
2 cups Italian Bread Crumbs
2 oz. Parmesan Cheese
1/2 tsp garlic salt
1 egg, plus 1 tbs water, slightly beaten

Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings.

Hash Brown Casserole Recipe

INGREDIENTS:
1 pkg. frozen hash browns (country style - 30oz)
1 cup sour cream
1 stick margarine (4 oz) or butter
1 can cream of chicken soup
1 T. instant minced onion (or freshly chopped onion to taste)
2 cups shredded sharp cheddar or colby cheese

PREPARATION:
Melt margarine. Place hash browns in 9 x 13 dish. Pour margarine over and mix well. Mix sour cream, soup, onion, and cheese in a large mixing bowl. Pour hash browns in the bowl and mix all together well. Then put all back in the 9 x 13 pan.
Bake uncovered at 350 degrees for one hour.

Make breakfast for dinner. Whip up some pancake batter out of a box, make some eggs, and serve some fruit and cottage cheese. It's a change of pace and the kids'll think it's fun. It's also really easy and takes very little time.

Make pot roast, you can do it in a slow cooker, or a roasting pan. Just use a rump roast, or pot roast, and cut up potatoes, and small carrots. Add beef broth to cover roast. (you can add cream of mushroom if you want). Then let it cook for about 6-8 hours, depending on your taste. I prefer my roast tender, where it falls apart.

You can do a different variation on spaghetti too, cook your spaghetti as usual, and pour chili over it instead of spaghetti sauce.

Fry up or bake chicken drumsticks.

Make baked potatoes, and put broccoli over them (which can be bought cut up in a bag in the salad section) and pour melted cheese over them.

Bake chicken nuggets.
